I was planning to go to Atlantic Village today, but the forecast is dreadful, so I'll wait until the weekend

Thursday is my cooking / baking day, business through Country Markets. I have made / baked......three varieties of cheese scones, tea loaves, date and walnut cakes, flapjacks, shortbreads, viennese fingers, victoria sponges, fish pies, cottage pies, two large quiche and a minced beef pie. Rewarded myself with a favourite lunch....... Warburton's thin, scrambled egg x 1, marmite and a cheese slice. I know the thins are a tad carby, but so much nicer than bread ,I find, and will have a carb light dinner. Taking ten minutes.......
 
Special day today, as I'm taking my friend for a special pre-operation meal at our favourite restaurant as a treat. Lots of carbs left today so I can treat myself.

Very pleasant today. Back door open and enjoying the sunshine. Did a lot of gardening over the weekend so very stiff this morning. Glad to get in the pool for an hour this morning to loosen up.

933 cals, 84.2gm carbs of which 55.1gm sugars and 2.2 of my 5 a day (figures not available for peas or cauliflower cheese)

Last nights dinner here in Barcelona was a simply delicious Chicken and Chorizo paella shared with my fiencee Gloria followed by some naughty but very very nice churros with chocolate sauce...not so sure about the carbs but oh boy it was great food.Will definitely be having a walk today to walk it off..
 
Another pleasant today. Back door open and Tufty and I are enjoying the sunshine. HbA1c blood test this morning plus liver function, then chiropodist this afternoon. Ironing in between.

@stephenS50 I am so jealous! My Spanish classes start next week. I remember a long weekend in Barcelona 20+ years ago at start of March when we weren't allowed on top deck of the tourist bus because of the snow! It had been warm and welcoming a few days before ( but snow in uk) I was diagnosed type 2 at end of July and only rice I've had since then was a big treat when a food truck was at one of the local pubs and I had seafood paella. Yum. I have previously eaten it in Valencia. Churros are popular as an early breakfast on the way home ..
If you are in the area for a while I have stayed in Girona and included a train journey to Figueres for the bonkers Dali museum. The city is compact but very interesting.
I remember during lockdown making seafood fideú with prawns merluza and squid you can use broken spaghetti if you don't have the noodles. This was prediabetes so would have to check carbs.

Enjoy the rest of the trip.
 
What a treat last night..beautiful barbecued monkfish and vegetables cooked by my fiencees sisters Spanish husband at their lovely home in Barcelona...what a lovely lovely meal.

What kind of noodles were used to make it low carb?

I usually just use rice noodles which aren't low carb but are a lot lower than the egg noodles I used to have, and I get on ok with it at the moment.

I've been seeing so much ai generated images recently, something about that photo makes me think it looks ai generated.

I have a packet of edamame (soya) bean noodles from H & B which are low carb 13g per 100g and no way would you need to cook 100g, I usually cook 25g per portion. So yes low carb. I also use edamame or black bean pasta which is similarly low carb.

That's much better than what I'm having. I use Mama rice noodles are around 37g carbs per nest. So lunch is usually under 45-50g once the rest of the broccoli and spinach and veg gets chucked in, which isn't bad considering I'm full all the way until dinner and don't often need a snack

I'll pick up a couple of boxes while it's on offer. Shame all the good stuff is expensive but this doesn't work out that much more when it's on an offer
 
If I am going to have noodles which I admit is rare, I use konjac noodles which are pretty much zero carb and lots of fibre. You do have to rinse them really well to get rid of the preservative liquid they are in but they just take a couple of mins in the microwave. I sometimes use them as spaghetti with bolognaise sauce as well as noodles or you can also get konjac rice to have with chilli or curry.
 
Today I should have been setting off for Sicily. Instead I am home, having had to cancel my holiday. My cat became ill and was admitted to hospital Friday. She has a recurrence of pancreatitis, and will be needing ongoing daily treatment at the vet over the week. No way could I leave her - the cattery lady would not be able to take her in and collect her daily, as it's a 30 mile trip, as she is a full time carer as well. I thought my travel and pet insurances covered holiday loss, but learned the hard way to read the small print. They both cover emergency treatment, but only for immediate life threatening issues, and my cat's condition is chronic, not life threatening. So I lost everything. But my cat is my family and comes first.

I sometimes use them as spaghetti with bolognaise sauce as well as noodles or you can also get konjac rice to have with chilli or curry.
That's the biggest problem with the Konjac products they don't smell to good and rinsing them can take forever to get rid of the smell and taste
