Food ideas with photos

Today I cooked a pot of shortcut stew
Sometimes I call this store-cupboard stew, but todays only had 1 cupboard item.

One backup can of stewed steak in gravy (handy to have, but had slipped past the sell by date)
a handful each of lentils and pearl barley (mmm pearl barley)
a bag of sliced leeks, ditto mushrooms, butternut squash and a few baby potatoes - all needed using as I haven't been cooking much lately
2 tsp smoked paprika, and 1 tsp ground ginger

It had a nice sweet smokey taste. I have a few more meals sat in the pot cooling atm :D

Never eaten a chickpea in my life, but these sound like something i could turn to when i have the munchies rather than half a tub of pringles. (Freshly diagnosed, haven't had first meeting with diabetic nurse yet) Do you have to weigh these or eat in moderation?
I think eat in moderation and include in the carbs you are having for the day as they are about 55g carbs per 100g, as opposed to nuts being about 10g carbs per 100g.
 
Now Halloween is over I'm turning my pumpkin into soup. Never eaten pumpkin before so it will be interesting to see how it turns out.
1 medium pumpkin, roasted: 600gm mixed squash and sweet potato dice: 1 large onion: 2 vegetable stock pots: 1 tbsp vegan bouillon powder: 1 can light coconut milk: heaped tsp curry powder: water. I'll poach for about 30 minutes until the veggies are tender, then I'll blitz and season

1246 cals, 67.3gm carbs of which 36.5gm sugars

B: Boiled eggs and soldiers (17.8gm carbs)

L: Ham salad (8.9gm carbs)

D: HM Pork casserole, cauliflower cheese, carrots, sprouts, peas, leeks (24.0gm carbs).

S: Peppermint tea

Plus: Semi skimmed milk, cholesterol lowering drink and Fybogel (17.0gm carbs)
 
@Felinia Keen to hear how your soup turns out. I hadn't considered adding coconut milk to my spiced butternut squash soup, but will definitely keep that in mind for the future.

I always add coconut milk to any soup I add curry powder to. It softens it and makes it a bit creamier, although does up the carbs a bit. But 1 can makes 8 portions of soup minimum, so it's not a lot. Will let you know.

That sent me to the kitchen to check a can of (normal not light) Coconut milk for carbs as with being coconut, I hadn't bothered to check it before. Phew! Only 3.2 per 100mls so might possibly be diluting the carbs in the soup rather than increasing the carb content, or probably a neutral effect although obviously adding that much plain water instead of the coconut milk would mean less carbs per portion. I don't know if the light version has more carbs as I never buy that.

I found the soup very bland. It could have done with twice the amount of curry powder. I added lots of black pepper and some salt, but it's still not one of my favourites, unfortunately. But it wont be wasted.
 
I thought it seemed like an awful lot of pumpkin and squash and sweet potato which are all a bit too similar and not enough other flavours. I would have added several onions not just one and definitely garlic and some celery perhaps and probably some tomato puree. Maybe some crispy bacon crumbled up and served with it might give it a bit of umami.

Sometimes if something seems a bit bland I add some chorizo (fried up so crispy) and smoked paprika.
I do squash and red pepper soup which usually works our OK but needs a squirt of tomato puree.

Always roast in the oven first with a good dollop of curry powder. Cooked in homemade turkey stock with onion and celery then blitzed. Seasoning adjusted, this time more salt, cumin, chilli sauce and garlic with half a tablespoon of butter to add richness.

Goodness knows what somebody on our allotment site was going to do with the 3 massive pumpkins he had grown, he was taking them home in a wheelbarrow one at a time and they overhung by a foot on each side.
You might like the T & M varieties Mashed Potato and Baked Potato or Turks Turban which are my favourites.

Maybe they were destined to feed some local pigs. Seen a lot of FB posts asking for post Halloween pumpkins to feed piggies. I would recommend Crown Prince ( medium size with blue skin) and Onion Squash ( dark orange and look like large onions). Both available in supermarkets if you don't or can't grow your own.
 
Liking the squash suggestions. I made the mistake of growing giant pumpkins a couple of years ago and of course most of it wasted because I simply could not use up even a tenth of it before it rotted. As you say, bland flavour too.
 
Thanks for the interesting suggestions to pep up my soup. I might try tomato paste, or tomato ketchup even. I hadn't thought of chilli sauce.

I almost always add a good shake of Worcestershire sauce to my hm soups.
 
I am scared to eat cheese at the moment due to my cholesterol levels but really miss it, I was a bit of a cheesaholic pre diagnosis.
Same here!
Yesterday went to do the weekly food shop and for the first time in years & years I didn't buy any cheese. It kinda felt weird! Have an appointment with Dr. next week so will speak to them about it then. Luckily there are quite a few cheesemongers here so hopefully will be able to buy very small amounts rather than the supermarket minimum sized blocks of 300g.
 
I am so pleased I opened this thread. I have been unsure what I could eat and how much since I was diagnosed with prediabetes. You have all helped me no end. I am also trying to lose weight to help with my diagnosis. It seems some of my all time favourite foods can be eaten. I have managed to lose 29 pounds to date. My appointment with the diabetic clinic in James Cook Hospital is on the 15th November. Then I will know if the weight loss and the recording of everything I eat has made a difference.
