Food ideas with photos

This is going to sound strange, but since being put on ezitimibe, my side effects from metformin have actually decreased - less tummy issues. So I'm happy, and if my cholesterol reduces, then my GP will also be happy.

1171 cals, 87.6gm carbs of which 54.5gm sugars

B: Ham on toast (19.0gm carbs)

L: Prawn and egg salad (I finished the HM soup) (7.4gm carbs)

D: Roast pig, broccoli cheese, carrots, peas, leeks, apple gravy (31.9gm carbs).

S: Peppermint tea, sparkling strawberry water (12.0gm carbs)

Plus: Semi skimmed milk, cholesterol lowering drink and Fybogel (17.0gm carbs)
 
Pork loin steak with savoy cabbage (cooked with a knob of butter) and green beans dressed with some sour cream and chive dip that was getting long in the tooth and needed using up and a dollop (don't you just love the word "dollop") of piccalilli just to give it some extra flavour.

@rebrascora - Pork loin or Pork chop is one of my go to's but I put two pans on the hob, pan fry the pork in one pan along with some chopped onion and when the onion is browned I bung in some white wine and a crushed clove of garlic and leave it to reduce. In the other pan goes some oil and a handful of frozen french fries. When the fries are done they go into a metal sieve and some sliced mushrooms go into the pan to be cooked with the sieve of french fries sitting in the pan to keep hot. When the mushrooms are done, the wine will be reduced and the pork nicely done. Add a dollop of sour cream to sauce and season to taste. Put everything on plate and eat.

Then take photogaph.

@Docb I have given you a love emoji for the pork and onions but I wanted to also add an "Oh no!" for the frozen French fries!! 😱 It would be a very sad and desperate day for me to want to spend my limited carb allowance on French fries. I guess we are all different! Proper chips made with real potato perhaps or parsnip chips although I don't really miss chips or other potatoes anymore but I cannot see the attraction of French fries at all and never could, even before diabetes.

I may have to buy a bottle of white wine and try your pork, mushroom and onion, sour cream sauce though as it sounds really good, but I will have it with my savoy cabbage and whatever other veg I have and leave the fries to people who enjoy them. 🙂
 
My theory on fries is that it looks a lot more than there actually is - if you look at a small portion then there is more space between the fries than there is fries. One day i will get round to weighing both chips and fries and check it out.

What I do know is that the portion size I have does not push my BG out of bounds and I can shallow fry them so I'm happy. 🙂
 
We've just got back from our pre Christmas lunch at Bickleigh Mill - an annual tradition. Today I don't have breakfast or dinner, just the turkey lunch, plus apple and mincemeat strudel. No carb counting but back on the straight and narrow tomorrow.

Just a shake of black pepper

How i do it

Done in slow cooker
A Cauliflower and a leek......any other veg you can fit in....celery and brocoli....some chopped up garlic....top up with stock made from low salt cubes......let it bubble for 3 hours........chuck in about 180g of blue stilton......give it another hour.......blitz with a stick blender......and pepper as you like....and enjoy....enough for a few days

Sounds lovely except I am not a fan of blue cheese. Would it work with a nice mature cheddar?

Thinking smoked trout and scrambled egg for breakfast. Christmas fruit cake with chees around 11 with glass of port.
Possibly a thick pork chop with mash and yorkshire puddings and much veg. Followed by Christmas Pudding and brandy sauce. A good wine and some whisky with chocolates. Or I might substitute pork for a duck in orange sauce.
I appreciate most of this is illegal but I am reasonably good the rest of the year. Blood test next week and I was at 41 but expecting it a little higher this time.
