Hello all, this my balanced plate attempt for today. It is two chicken legs with asian style sauce, wholemeal rice, cucumber and onion salad and blanched bok choi. It took me 1 hour. 20 minutes of preparation and 40 minutes cooking. Most of this recipe is from a low calorie recipe book.

Not posted here for a few days. Had my pre diabetic review tests on Tuesday. Got a late afternoon osteopath appointment, so picking up a Chinese takeaway. Aiming for a sensible choice so made an estimate with beansprouts instead of rice and not a heavy carb sauce.
1190cals, 75.0gm carbs of which 40.3gm sugars
B: Vanilla almond shake (9.1gm carbs)
L: Ham salad with croutons and creme fraise/chive dressing (17.4gm carbs)
D: Cantonese special mixed meats and stir fry vegetables plus beansprouts (32.6gm carbs)
Overcast today with rain due late afternoon. I'm having a new windscreen this morning, so good timing! Knees really bad now so I'm making a concerted effort to lose more weight. I had lost 11kg from my heaviest during lockdown, but there's still a long way to go. I find it so hard, even though I stick to my low carb, low fat, higher protein diet for my diabetes and high cholesterol.

B: Chocolate malt almond shake made with 175ml water and 100ml unsweetened almond milk (9.1gm carbs)
L: Low fat cheese and mushroom omelette made with 30gm reduced fat cheese, 2 chestnut mushrooms and 2 large eggs (0.8gm carbs)
D: Liver and bacon, 3 Jersey Royals, 150gm cauliflower cheese and 60gm sprouts (41.4gm carbs)
I've just made one of my favourite bakes, adapted from the old Iceland and M&S Suffolk Hotpot recipe
Serves 6 with green vegetables, 303cals 20.2gm carbs
200gm unsmoked gammon steaks, diced
1 small white onion, diced
200gm sweetcorn
600gm cauliflower cheese (I used Tesco, but you can make your own - it replaces 3/4 of the potatoes)
200gm boiled potatoes, sliced (I used Jersey Royals)
100gm grated cheese
Pre heat the oven to 180C and get a baking dish ready. I used a 30cm x 15cm x 5cm dish
Dry fry the gammon and onion until softened but not brown
Tip the cauliflower cheese into the dish, then stir in the sweetcorn and gammon/onion mix
Top with the sliced potato and sprinkle grated cheese over the top
Bake for 45min on the middle shelf until bubbling and lightly brown
After a day out yesterday (and KFC) back on the straight and narrow today, more or less. Have just edited today's menu as I didn't have enough ham for the ham and cauliflower bake I intend to make for tomorrow. I was a lover of Suffolk Hotpot available many years ago in Bejam (remember them?) and M&S. Sainsbury's now do a sort of version. I substitute 2/3 potato with cauliflower, to reduce the carbs and bulk up with vegetables to keep the processed ham to less than 50gm per portion.
My diabetes review went pretty well yesterday. I took in my food diary and she suggested a few tweaks, which I will try out. Less toast, potato and processed food being the main suggestions. I had increased my carbs after being advised I should not go too low with Dapagliflozin. But having been on the drug for almost a year with no side effects I was told I could reduce a bit - but not today as I have food to use up!
Yesterday my friend chose a fish and chip shop for lunch, so I had to really juggle my intake. Filet of fish burger (without bun) and small chips (left half). Friend was astonished as I normally hoover up everything on my plate when we are out, but I promised my DSN I would try and reduce my HbA1c over the next 10 weeks, and I will really try.

no proper recipe, I made it up as the chicken was cooking ...
fry off some chopped chicken
add in some butternut squash (dinged in microwave first)
add in some cauliflower (dinged in microwave first)
throw in some red pesto, some soft cheese to make the coating sauce (i used the lightest version of Philadelphia)
add salt, pepper, paprika and ginger to taste
