Back to the garden centre as I begin to put together my gardens. Today's menu I hope illustrates that you can eat a normal diet, and be well under 130gm carbs, by having a little bread (medium slice from a 400gm wholemeal loaf), and new potato (100gm boiled in their skins). I have previously tested, of course, and know my body can tolerate these small portions.

D: Pork and apple burger, new potatoes, cauliflower, peas, leeks, apple gravy
I'm having an 'eggs for breakfast and salad for dinner' Salad Summer. I've gone mad on Tuna Salad.
Yesterday
Scrambled Eggs with a red onion, garlics (tons) and olive oil in the microwave.
Tuna Salad
and risked
White rice (boil in bag) with garden peas and roast chicken nom nom nom
Put on nearly 3 pounds overnight and half inch around middle. Good grief. Whole continents eat rice daily, why are they not all fat and ill? 😡
I am improving though, as this is what I was eating at the start of the year.
The fishcakes we had the other week, my sister came down and did dinner for me and my brother. Scrummy. So scrummy I might have already posted. I wish I was having these tonight.
I keep taking pictures of meals with the idea of posting them but then I get lazy, or think they are too simple to give anyone much inspiration (different variations of scrambled eggs with side salad, basically). But I had something nice at work the other day.
Salmon, green beans and baby potatoes. Seems fairly healthy to me. I know some people don't do well with potatoes but it wasn't a big amount, you can always reduce or substitute as well.
The interesting bit was the sauce, they call it "sauce vierge" and you can google recipes for it, the base ingredients are olive oil, lemon juice, chopped tomatoes and basil. I know this one had also capers, olives and parsley, between other herbs. It added a good extra flavour to the dish and it seems low carb and easy to make. I'm thinking of trying it at home 🙂

I believe that there is a higher percentage who develop type 2 in South-East Asia. Certainly all the radio adverts for the Healthier You course say "if you're over 40, you're at increased risk. If you're over 25 and of South-Eastern Asian origin, you're at increased risk". I don't know if that's genetics or carb percentages in the diet though
