Food ideas with photos

I've made a few 'breads', but this one is the closest to real bread, perhaps because of the spelt and oat bran which give it a real bready taste - 9g of carbs per slice. I seem to be able to manage two without getting much of a rise.

Slices are quite small, though!
 
1st picture is Sues dinner quiche Lorraine with feta and stuffed garlic olives,

A bit basic tonight, just pork mince with a rare portion of carrots, may favourite cabbage (savoy) and broccoli with sour cream and chive dip poured over it, which needed using up. Despite it being quite plain I actually really enjoyed it. The carrot was incredibly sweet!!

Simple is sometimes better . It looks good to me 😛
 
It's been a month since I last posted my meals as I've been supporting my friend who recently lost her husband. Not been very good with my diet and pretty sure I'll get my knuckles wrapped at my review next week. I tried a new shake made from pea protein as a change from my usual vanilla. OK but not brilliant.

767 cals, 77.7gm carbs of which 34.7gm sugars

B: Cinnamon apple almond shake (13.3gm carbs)

L: HM butterbean and sweetcorn chowder (25.5gm carbs)

D: Silverside of beef, cauliflower cheese, new potato, carrots, onion gravy (21.8gm carbs)

Absolutely bucketing down here. Tufty cat curled up on her chair by the radiator. I'm thrilled with my HbA1c diabetes result as it has fallen to the 2nd lowest reading since diagnosis. This despite having indulged in a few mince pies and slices of Stollen!! Too many cals and carbs today but I'm celebrating!!!

B: Poached egg, bacon, baked beans, toast (25gm carbs)

L: Crustless quiche, cheese coleslaw (33.5gm carbs)

D: Lancashire hotpot, sprouts, cauliflower (46.6gm carbs)

Congratulations on your hba1c results @Felinia! Worthy of celebrating with lovely food.
 
I've been taken pictures of some meals but always forget to post them.

First a couple simple ones I make regularly. A quesadilla filled just with cheddar and oregano, with a side salad to make it more balanced and a cup of chicken soup.

A version of my favourite salad to make myself (I like some others from restaurants). I usually put lettuce, apple, blue cheese and walnuts, originally also deli ham but I eat less meat these days. This picture is with pear instead but also works well.

I have tried the apple-walnut-cheese combo with feta and goats cheese too, I like both, tho I prefer the blue one. This is a Danish Blue, I'm not a fan of Stilton.

Now for some actual cooking, a few weeks ago I made a mix of Bolognese and cottage pie with a carrot and swede mash on top. I am not convinced on this mash, is nice but feels a bit too sweet for this dish. The savoury filling was very tasty tho!

I had some pieces of swede and carrot left that I didn't mash, and I had them another day with onion and rosemary veggie sausages. I put them all together in the oven and drizzled the veg with some olive oil and dried sage. IMG_20231214_165032.jpg
 
And last but definitely not least, I had a go at making a family recipe, soup with meatballs. Now, that's not the usual soup I see in England that's creamy, it is basically a broth with tiny noodles and in this case, pork meatballs. I did cheat in this occasion with the broth and bought a sachet of Knorr's chicken noodle soup, but it was just to test the meatballs. They are not exactly as my grandma's but hey, not bad for a first try and missing a couple regional ingredients. I had a portion of homemade broth from "cocido" in the freezer and now I have meatballs there too, ready for an occasion to make the complete dish!

Lunch today was a fried egg on black pudding with mushrooms and onion and pickled gherkins and 2 cherry tomatoes.

I'm always surprised at the size of some of the meals shown. I don't feel so guilty now then. :D

It is all about what you put on the plate. I don't like to feel hungry, so I have a good plateful of food, it's just made up of low carb elements. That last one with the black pudding and egg is served on a smaller plate though, so may look a bit more than it is.
