Silly question 🙄 How exactly do you eat an open sandwitch?

I'm guessing that the theory is that you lose the top slice of bread - correct. Everytime I've done that I've ended up folding the remaining slice in half. That's ok - but my brain seems to confuse itself into thinking that I've only had half a lunch then 😱

I just laid the bread out lifted the chicken pieces on then smeared the cottage cheese over it, used a knife and fork and ate it,hay presto no mess.🙂

Well lunch yesterday was lettuce wrapped with some pork and belotti beans, chopped yellow peppers with cucumber-result of that was a 6.7% so definetly think the bread was my problem.

That sounds really tasty Steff! Result! 🙂

Wow sounds as if you are doing very well Steff. Hope you are feeling better as well with lower numbers.

Steff I am so sorry that I've only just replied. I'm glad that this seems to be improving and I hope that you continue to keep good BGs at lunchtime. Your sandwich fillings sound very interesting:D

Thanks guys

Yup AJ im trying to be as inventive as i can,yet watching the carbs at the same time x
Tomorrow will be fun first day with a lettuce in my bag ready for lunch haha

There's a Chinese starter - is it Yuk Chung? - that consists of (I think) pork mince and fried onions and dunno, which you spoon onto individual iceberg lettuce leaves - scrummy !

Yuk Sung - Suze mentioned it a few posts up 🙂 I'd never heard of it, but then again I am from Yorkshire and in the absence of bread it would probably be a pie crust or a Yorkshire pudding... 😉

I am beginning to wonder if I'm getting more sensitive to bread products as eating cake or bread seems to throw my readings up. Anything to do with Victoza?

Not sure Vic could be, be good to see if theres any evidence around to say yay or nay, asking GP would be pointless(in my case anyway).

ive only just started carb counting and ive downloaded a brill app on the blackberry called Calori Counter by FatSecret... its amazing and its free>

covers pretty much everything, including own shop brands

I nearly had a drifter mcflurry til i found it had 62 g of carbs in it!!

All was great today gem lettuce leaves wrapped in them was pork, red onion, green pepper and chopped cherry toms, was quite funny actually i was getting quite an audience as i stood there chopping my pepper haha
BS 7.0 though

The big no-no for me seems to be spuds, even a little bit sends my BG through the roof. Having said that, I don't eat much bread either, two or three times a week maybe, a granary roll with some soup or a bacon butty on Sundays. Occasionally some toast (or a toastie) if I'm low.

Lunch these days is usually some home made soup and a couple of crackers, or like today, a Lemon cous cous salad with char grilled lamb, chopped peppers, onions, sweetcorn and toms. I've got a little bottle of my own chilli oil in the fridge here and I'll stir in a few drops of that just before I eat it to liven things up a bit. I've gone back to oatmeal for breakfast as that seems the safest as far as my numbers go. Last night's tea was some wild mushroom tortellini with a sauce made of low fat cream cheese and grated cheddar. I'm desperately trying to even out the numbers a bit since my sojourn in the hospital recently, even though my highs aren't nearly as high as they were and I'm rarely in double figures now for very long.

Isn't it odd how different foodstuffs affect us in different ways?

Bad tummy today so had carrott soup for lunch....numbers were 8.5 not to sure if its poorly tummy causing it so wont worry overly about today.

Sure is Alison, im fine with spuds although i seem to only have them baked and I use sweet potato for that....I do miss hash browns from Maccie ds though but ive managed not to have on in yonks 🙂

Cant believe i came in and opened my emails to see that diabetes .co.uk sent an email titled low carb lunch ideas, how great got some ideas of that now

Update

After some help from a lovely member in here I think its all going well atm, i did overkill with the wrapping of lettuce I was starting to worry staff and they thought i was a secret bunny rabbit lol.

So started using burgen bread and overloading it with salad stuff but with some nice fillings including home made mayo and chicken and i even tryed this south african meat billatong or something its called not to sure but it tasted nice.
Im not just implementing low carbs into lunch im trying to include tea also.

Excellent results Steff! 🙂 Also shows how useful it is to be able to test so you know that the changes you have made are helping 🙂
