Food ideas with photos

Tummy a bit better this morning, but I'm not risking going anywhere!! Sticking to a fairly bland diet.

B: Boiled egg and soldiers

L: Yellow vegetable soup, croutons

D: Fish gratin, runner beans, carrots, peas

S: Peppermint tea, latte

Plus: Semi skimmed milk, cholesterol lowering drink and Fybogel
 
My Quick Mix - When you dont know what to have for dinner (also suitable for Lunch)
Oil shallow pan for oven 190C
One thinly sliced potato and some courgette into oven pan. Salt
Add some grated cheese on top of potatoes
Grate half carrot and courgette ea into a bowl, chop and add few spring onions.
crush one clove of garlic
add two eggs to grated veg mix.
add 3 dessert spoons of SR flour (what I had to hand) mix well
add some milk as required. sprinkle some cayenne pepper mix
Pour mix over potatoes some broadbeans on top
Cook 30 mins at 190C (you may want to check after 25 mins.)
Fan assisted normal oven. Tasty
you could add pre cooked chilli mince to this I would think tasty too

I always think potatoes are off limits. I'm trying to teach myself nothing is off limits in sensible portions. I'm being very good at the minute a couple of days in but still doing weird things like having Chinese for breakfast due to being offered it last night but I'd had three meals so I'm having it today! I need to start measuring BG again then.

I'm going to have to start refusing some foods... I find it hard to refuse food ie cheeseburger and chippy chips one night!

Fully recovered from the antibiotics, stitches out, leg healing nicely. Should be back in the pool in a couple of weeks.

Brunch: Poached egg, grilled bacon, mushrooms (0.2gm carbs)

Lunch/Dinner: Smoked cod in a pea and sweetcorn sauce, cauliflower cheese, carrots (51.1gm carbs)

S: Peppermint tea (0.6gm carbs)

Plus: Semi skimmed milk, cholesterol lowering drink and Fybogel (16.0gm carbs)
 
Rosemary and onion vegan sausages with roasted cauliflower and side salad. I seasoned half of the cauliflower with just olive oil, salt, pepper and garlic powder, and the other half with that plus paprika and turmeric. It was quite nice and I want to try and make the cauliflower in the air fryer next time.

I also made a portion of cauliflower and potato soup/puree. I intend to eat it tomorrow with a bunch of grated cheddar mixed in :D

Sorry no photo because I ate it. However I enjoyed the meal. I bought a nice chunky piece of hake from fishmonger. I put some cloves of garlic and red pepper and flaked almonds in the airfryer after a few minutes added the hake with a dusting of shwarma seasoning and Cumin seeds. Cooked in microwave majorcan new potato and local asparagus. I enjoy Majorcan new potatoes when first in the shops. Otherwise I wait for local potatoes. The potatoes are a reasonable size so one was enough. You can use other almonds I happened to have flaked. Red pepper garlic almond and dash of oil equals romesco sauce. You can buy cooked red peppers but I had a fresh one.

Sea bass tonight.

I have just had a rib-eye steak with mushrooms fried in butter with the steak, a massive plate of bistro salad (2/3 of a big bag) dressed with balsamic vinegar with 4 cherry tomatoes and some cucumber and a great big dollop of cheese coleslaw. It was really yummy and very filling and probably about 20g carbs. Didn't get back in the house until after 9pm tonight after working with the horses and the steak was relatively quick and easy to cook and a real treat! I don't miss having chips with it at all now as all the food on the plate is really tasty and filling.
 
I just made a batch of my new favourite breakfast bread. Probably more accurate to call it nut loaf but to me it tastes very much like stoneground wholewheat bread. I make it as a half-depth loaf because it’s easier to slice. Each slice approx. 2.5g carbs.
