If we are talking snacks.... a packet of pork scratchings. Perfect combination of protein and fat with no carbs and most importantly crunchy. I have developed a real need for crunchy food in recent years.

Mackerel pate on toast is my favourite breakfast lunch and dinner
My hero! I could eat limitless amounts of that (subject to carby toast etc etc but from a taste perspective mmmmm yeah)

Another hero! A friend of mine swears that for her the ultimate indulgence is prom scratchings and champagne. Not sure which pub or bar thinks of that combo though...

1 piece of toast depending on brand can be under 10g carb. So 13 slices of mackerel pate on toast would still be low carb using the 130g definition. Subject to your own bg of course I see no issue with it as a choice of breakfast.

Well said and I agree with you. I could easily do 13 slices in a sitting too I reckon :D

I really meant the faff of thinking about the carbs / insulin ratio which honestly isn't too bad for me normally. Just sometimes I like a break from thinking about it and just go low carb only. For this one maybe just spoon out the mackerel pate directly :D

I've had a strange day! I was volunteering at Parkrun this morning and went hypo. I'd almost forgotten what they feel like. Fortunately an old running friend had brought cakes and so I had one. I now realise why I'm not keen on cake.

@Lucyr Do you make your own mackerel pate?
I used to buy it and then realised how easy it is to make.
A packet of smoked mackerel fillets and a two or three heaped spoons of creme fraiche. Blend until the consistency you want. That's it unless you want to add a splash of lemon juice and grind of black pepper or some spiciness - I quite like some smoky chipotle.
No need for the E numbers in the ready made stuff and I can control the fish to creme fraiche ratio as well as chunkiness.

Yes, tinned mackerel, lightest Philadelphia, bit of lemon juice and a fork.

I find things can taste weird when hypo. I get nauseous when low and really don’t fancy much at all. If I do decide to have a treat item, eg a cupcake, it never tastes right when hypo.

Try a spoonful of horseradish in the mackerel pate, I tend to use the peppered mackerel.

I don’t like strong flavours like horseradish or pepper, it’s a miracle I like mackerel

Is there a vegetarian version? Chalk scratchings?

I recently discovered "paper tofu" used it in a nice meal but I most defo want to try some different ways to cook it. Going to try baking the next batch. It should go slightly chewy and crunchy - could make a nice snack.

I'll report back if it's any good.

Low carb just lead to insulin resistance with me.
Same for me. Less than 30g of carb and my insulin can’t be bothered to do its job. We’re all different.

A favourite snack/meal for me used to be a few slices of a fresh french stick with 4oz or more of cheese with a half to whole bottle of wine! :(
