Porridge with berries most days! Porridge made with water. I am now adding a tsp of mascarpone because I am trying to maintain my weight.
Baked tomatoes are excellent! Even better with fried halloumi.
 
Creamy marmite mushrooms for lunch with sourdough.
Oh I wish I adore sourdough but it does horrible things to my bg no amount of fat or protein seems to tame it. Just waved goodbye to my last few slices as I have finally given up ....sigh

Are you injecting early enough? I find sourdough more blood sugar friendly than normal bread. I don’t bother experimenting with protein and fat amounts. I just eat the same amount (weighed) until I perfect the bolus amount and timing 🙂
 
My brain is struggling with this thread - I don't have a favourite food.
What I fancy now is something I have not eaten for some time or, even better, something I have never tried before.
This weekend, I found a lovely Columbian café where I had banana blossom arepa, It was amazing. I will be back. But not for a few months.
 
Very enjoyable lunch. Homemade baguette - made on Sunday so it did need refreshing in the oven, olives, cheese, salad and a homemade coleslaw with a pot of chamomile, rose and lavender tea.

I need to inject later with sourdough as the spike is about 3 hours after. I seem to digest it slower than other bread. If I wait to inject I spike before and can sometimes before and after so I've given up. But I have learnt that I use insulin quite quickly so need to watch out for slow foods.
