What light, easy to prepare, and cheap meals would you recommend?

Since I was so ill over the New Year when I couldn't eat anything for over 3 weeks I have developed a habit of overloading myself with heavy meals in the evenings. I want to get into the habit of eating lighter meals e.g. things I can eat with a bit of salad, but am not very creative! I've had things like chicken breast, small piece of quiche or salmon fillet, but would like a bit more variety - any ideas? 🙂
 
Braised lamb chop. Slice a bit of tomato, onion and some fresh basil. Place the chop on a large square of foil and add the other ingredients with a tablespoon of water or white wine. Seal the parcel and stuff it in the oven at approx 180f for for around thirty minutes (times may vary depending on your oven - fan assisted may take less). Season and serve with your choice of veg.

Or, chop up whatever meat/veg you happen to have handy and add it to a pint of stock, cook till soft and blitz. Serve with a slice of your Burgen bread.
 
Spanish tortilla and salad...you can make the tortilla as big or small as you like. Delia's recipe is close to how the Spanish make it, but you don't need as many eggs as she says - 6 for a dinner plate size tortilla. It's nice cold too!:D
 
Omelette, vary according to number of eggs and whatever else in fridge eg tomato, pepper, mushroom, spinach, ham, sausage, cheese etc.
 
The Span Om thing is good; if you ignore the spuds, onions and garlic you can put almost anything in it instead, at which point it morphs into a 'frittata' LOL

It's excellent as it is mainly eggs which are kind to delicate tum tums.

You could have it hot or cold with a few new pots and veg, or with salad, or on it's own. Keeps well in the fridge (foil it) - about 3 days I should say.

IF you can keep your hands off it!
 
PS have a look at 't'other' DSF recipe section and see what floats your boat for a change?
 
Thank you 🙂 I went for a 3-egg cheese, onion and tomato omelette tonight and it was exceptionally yummy! 🙂 Was a bit unsure about the insulin though, really not used to having such a low-carb meal - I guess I will find out later! 😱
 
Here's another. Couscous salad with whatever meat an veg you happen to have handy. I usually have some chicken or prawns around. Chuck a bit of hot water and lemon juice in the couscous, add a bit of chopped onion and chillies then the cooked meat and veg. Great hot or cold.
