Since I was so ill over the New Year when I couldn't eat anything for over 3 weeks I have developed a habit of overloading myself with heavy meals in the evenings. I want to get into the habit of eating lighter meals e.g. things I can eat with a bit of salad, but am not very creative! I've had things like chicken breast, small piece of quiche or salmon fillet, but would like a bit more variety - any ideas? 🙂
