Hi
Has anyone tried spaghetti/pasta made out of beans? I realise that they are not really low in carbs, but looking at their carb content it does seem possible to incorporate them into a low carb diet without doing too much damage. The question is "What do they taste like?"

I've looked on Amazon and found two which appeal. One is Explore Cuisine Edamame Spaghetti pasta, and the other is Black Bean Sesame Fettuccine made by the same company.

The vegan way of life has great appeal but some of the food I've tried has been pretty dire, so I would appreciate any recommendations!

I’ve had a pasta made from chickpea flour - totally fine 🙂 I’ve also had one made from a mix of veg - again it tasted fine. Remember too you’ll probably be putting sauces on it anyway, but I certainly didn’t find much difference in taste.

As for vegan food in general, I eat quite a lot of it. The trick is to avoid most of the horrible processed stuff.
 
I have tried a green pea pasta variant. It's ok with a sauce but has a grainy texture you don't get in real pasta. Not a massive fan tbh.
 
Have you tried zoodles (aka spiralised courgettes/zucchini)?
I make my own and use instead of pasta.
You can also do it with butternut squash and carrots ... and probably more
 
Thank you for the interesting replies. I'll investigate the spaghetti/pasta made out of chickpeas. I'm in agreement with you Inka about the readymade processed food, a lot of it doesn't taste good. And Helli, I have made 'zoodles' in the past, and the courgette ones worked out really well. So thank you for reminding me. I'll have to dig out my spiralizer.
 
I think my chickpea ones were a fairly normal high street brand like Napolina @AngelSprings They were made from chickpea flour and pretty much looked just like normal wheat pasta. They were in a darkish box rather than a bag.

I use the edamame bean and the black bean pasta and have found it quite acceptable with a tasty sauce, just don't overcook, it need very little boiling. I found 25g dry weight was sufficient for a portion so not many carbs for the pasta.
 
Hi LeadingLights, thank you for your reply. May I ask where you purchased the pasta from? Can it be bought from a health food shop, such as Holland and Barrett, or did you have to order it on line?
 
I did have some from Aldi but the latest ones I got from Amazon. I have not looked at H & B. Obviously not as cheap as the high carb bog standard stuff.
 
We sometime have the Aldi black bean spag. It tastes better with a strong flavoured sauce. But it tastes OK to me.
 
Also swoodles! (Swede noodles) can be made yourself in spiraliser or I found prepared ones in the veg section in Sainsbury’s a few weeks ago.
Made a nice change
