I tried something out of the blue the other night I boiled and mashed some cauli added some gram flour a bit of lo salt and some madras curry paste add small amounts of water bunged it onto a baking tray 25 mins at 220, the consistency came out like a spicey soft cookie they were not to bad(well I'm still eating them) at the weekend I'm gonna take it a bit further by adding mushrooms, thinly sliced onions, red pepper and a bit more spice paste
 
Sounds good, people use cauliflower to make pizza bases etc as well

If a keen baker/cooker I would suggest for a sweeter more bakery cookie using almond or coconut flour
 
Interesting! Do you have any idea of the carb count? You don't mention cheese?? Everything can be improved with a bit of cheese in my opinion. Was wondering if you could use it as a pizza base, maybe with garlic instead of curry paste and then the mushrooms onions and tomato/peppers on top.... You might have inspired me to experiment. I don't have any gram flour but I have coconut flour.

No I didn't use cheese I might do the next and as for the carb count I would imagine it would very as for measuring it was a bung in the bowl and hope for the best I was pleased it gave me something to work on and improve
 
Sounds good. How much cauliflower and gram flour did you use?
 
I would guess about 4 large heads and around 3 tablespoons of gram flour I used a half teaspoon of madras curry paste but I wish I would have used more it took around two minutes to mash and mix, next time finely chopped mushroom, red pepper and onions will be bunged in
