Thank you so much! Sounds good. (er, not for nut allergy folk, but luckily that isn't me). However, when it says 'flour' after the almond meal slash, is that just good old 'ordinary' flour?

I didn't know you could get coconut flour!

Ground almonds is the equivalent though Costco have Almond flour which is a bit finer. I have has coconut flour from the Grape Tree which is also good for nuts, seeds etc.
 
Ah, I misunderstood - it's almond flour (or, as you say, ground almonds). Thank you. Can you make these scones without any of the coconut flour by the way?
 
Yes, ground almonds will do because the finer stuff is less readily available and coconut flour is in most large supermarkets these days. Ground almonds are substituted a lot for wheat flour in low carb cooking and baking, because the flour is often the key carb rich ingredient, especially once you have subbed sweetener for the sugar.
 
I imagine the coconut flour being very fine improves the texture and lightness. You might get away with some psyllium husk/powder instead.

I have a memory of buying a scone snack with tea. (I really dislike tea.)

In order to get water (not the tea.) out of politeness for an over heating car with a coolant leak just to get me home, from a deserted West Country tea & scone cake shop? (I seemed to be in the middle of nowhere on a back lane using a traditional map. It was that long ago.) I survived the journey home with a nuked engine head, but my BGs were also shot.

Psyllium comes as husks or powder and is a soluble fibre. I use it along with chia seeds as a gut health and cholesterol lowering supplement. It is the main ingredient in Fibogel which they prescribe to help bowel movements. It swells when mixed with water/liquid to form a gel, but you can use it to make low carb wraps with egg and cheese and coconut flour or in baking as it works to bind things together and almost no carbs and no real flavour.
 
Now, you see, I've heard it is just the opposite! Tricky business all round. Maybe one should just alternate??!!! Half a scone with J then C, and the other half with C then J. See which tastes better!!!! 🙂

I do think it depends fundamentally whether we are regarding the cream as a substitute for butter, in which case it spreads on first, and then is topped with jam, or whether we think of it as 'cream' in which case it is dolloped 'on top'. I'm the latter. Cream is cream, and butter is butter and never the twain.... 🙂 🙂

Jam first for me, and none of these niceties of attempting to spread the (clotted) cream which IMO should be applied in as large a dollop as you can get away with in the company you are in at the time, delivered with a pair of teaspoons (or dessert spoons if alone).
 
Totally with you on squirty cream... it is an abomination, but some of us don't have access to clotted cream and have to make do with whipped cream, plus you can burn off a few calories in advance of eating them if you use a hand whisk.
I make our clotted cream. So much better than shop bought.
 
No access to clotted cream? Is that not a breach of the Human Rights Act or Geneva Convention or something 😱

Gosh, how do you make your own clotted cream? Does it need a machine, or just a lot of hand whisking or whatever?
