I must be the worlds worst cook Can anyone give me a quick, easy recipe for frozen chicken breasts. I have a microwave, crockpot and oven.😉
 
I'll start you off - first thaw your chicken breasts, LOL

Then put them between 2 layers of cling film on a flat surface and beat the bejazers out of them with something heavy- ish, rolling pin maybe or a flat shoe (you aren't going to eat the cling film LOL) They will go thinner but spread widthways.

You will then have chicken escalopes. Spread each escalope with butter and sprinkle that with S&P to taste plus a dried herb of your choice - you are after a 'speckly' surface, not and entirely covered one. Roll the chicken up - like a rug - and anchor it together with a cocktail stick, or 2, or more.

Chop a couple of shallots - or one large one, they have much more flavour than onions - and fry for a min or 2 until softened. Lob them into the bottom of an ovenproof dish or small casserole, sit your breasts on top, cover and cook at 350/175 Gas Mk 4 for about 30 mins. Remove lid and give them another 5 or 10 mins - only till they stop looking anaemic!

Serve with whatever veg you fancy - green beans would look pretty!

The only carb is in the shallots and they have far less than onions, just not exactly sure re fried ones. However fried onions are 17g carb for 100g and this would only be what? 50g?

You could if you wanted, wrap a rasher of streaky bacon round each roll of chicken but I usually find bacon done like this becomes mega salty and me no like!

Thaw, cut into strips (across the meat grain), stir fry (assuming you have a frying pan or wok and hobs on your oven) with no oil or very little if you have non stick pan, with any veggies you have to hand eg grated carrot, sliced mushrooms, peppers cut into slices, diced onion / shallot / spring onion, sliced cabbage etc, add a little soy sauce or stir fry sauce. Very little carbohydrate, but if you want some, soak, then boil a small portion of rice or add some noodles.
 
thaw, slice open the breast and cover in small pieces of thin ham then grated cheese on top, bake, yummmmmmmmy
 
Snuggle your skinless (thawed) chicken pieces (breasts, thighs, drumsticks, or a combination) into an ovenproof dish. In a large mug, combine a heaped teaspoon of prepared garlic, a heaped desert spoon of prepared coriander leaves*, and 3 tablespoons of lemon juice with half a mug of white wine or cider and a teaspoon or two of honey. Pour over the chicken and bake at 180 degres C for 40 minutes... Serve with brown rice and salad, new potatoes and beans, mash and peas, or whatever...

* These can be bught in tubes in supermarkets and sane a lot of work! Perfect for us lazy cooks... This recipe works equally well with prepared basil.
