I've bought a bag of quinoa as it's meant to be ok to eat in moderation. What on earth am I meant to do with it? Do I use it instead of rice/cous cous? Can anyone point me to any vegetarian recipes I can try please? I love spicy and Indian food, so if it's spicy, all the better.

I love quinoa. I make a tasty and easy vegan Quinoa and Kale salad with it. It has around 30g carbs per portion. I got the recipe from a book but I’ll see if I can find it online.

The thing with quinoa is to boil it slowly not fiercely, and don’t put too much water in. It’s more like cooking porridge than rice, but you don’t want it to look like porridge! You need to watch it towards the end of the cooking time so that it’s nutty and fluffy. If you overlook it, it goes a bit stodgy. I find it takes around 10-12 mins to cook.

Off to look for a recipe now!
 
All I can find is the recipe on US sites with their cup measurements 🙄 The recipe is from the Oh She Glows Everyday cookbook by Angela Liddon and is called Protein Power Rainbow Quinoa Salad.

If you can find a non-cup recipe, you can make it. Or you can look on the Oh She Glows website for other quinoa recipes (typically, she hasn’t got the recipe I’m talking about on there).

Quinoa is almost half carb, so not something to indulge in on a regular basis as it can really eat into your daily allowance. I'd be more inclined to use steamed cauliflower and a demi-lune to chop it fairly small.
 
@Drummer thanks for that. I've had cauli rice before and it was surprisingly nice with lentil daal. I was a carb monster before diagnosis, I need to make sure I don't get myself lead astray by quinoa.
 
It depends on your diet.
I found as it's a complex carb, low GI, and nowhere near half carb for a cooked portion, it was fine even when I was first diagnosed.
It's around 17g for a (cooked) 80g portion.
Unless you ultra low carb it's usually ok.
It's one of my staples.
Don't be put off, try it and test your BG after.

Agree - I was fine with quinoa in my early post-DX period.
