Oh, I'm impressed with Cauliflower Rice

Hi,

My OH loved a curry, but since his T2 diagnosis I've put off making one. Well tonight I bit the bullet and went for it. I attempted Cauliflower rice for the first time and it was a success. So easy and a totally suitable alternative to rice. I also packed the curry with extra veg to make it go further (I got four portions out of it instead of 2! Definitely getting better at portion control).

The whole meal was 300 Cal's and 24g of carbs. It got a thumbs up from my OH too

Wow, that looks truly delish! I've avoided doing cauli rice up til now, just having broccoli with my curry instead of rice, but this spurs me on to give it a go :D
 
I was reluctant too, but it was really easy and really tasty. Hope you give it a go and enjoy it as much as we did X

I've been using cauliflower rice for a while

I don't have a food processor; I tried using a grater but found that was a bit awkward and took too long

So now I cut out the florets then dice them on a board with a sharp knife, then cook them in boiling water till they're soft, but still have some bite or crunchiness to them
It helps if you have a large board & knife as the cauli tends to spread

I have found that I prefer cauli rice that isn't very fine, and still has recognisable pieces

Perhaps my memory is playing tricks, but I'm fairly sure that somewhere I've seen cauli rice in frozen food displays

Search on YouTube, there are several videos for cauliflower rice, and similar variations

Yes, I was right.
Search Google for 'cauliflower rice' and it's listed by ASDA, Sainsbury's and various online suppliers
Prices vary, but tend to be a bit expensive; buying would be OK to try, but it would be much cheaper yo make your own

I bought a mini food processor from Amazon for less than £30. Chopped the cauli into large chunks and it took about 30 seconds in the processor to get the rice consistency. I then microwaved it for 3 minutes 30 (stirred half way thorough) and that was it. Job done. A full cauli will give us 4 portions of rice.

I have a mini processor too, bought in Lidl for £13.99. I have seen them in there twice since at a similar price. I agree, microwaving the rice (or steaming it if you don't have a microwave) leads to much less soggy rice than boiling it.

I just buy it, from Iceland (4 steam bags for £2) or tesco (also 4 for £2 but sometimes on offer as 2 of those for £3). It doesn’t taste of anything so I usually microwave then fry off with random things from the fridge, or have with a chicken curry
 
I get frozen boil in the bag rice, top it with cheese sauce and have it with smoked fish. Very tasty.
 
I had the cauliflower rice & curry from lidl & was very impressed. It was a ready meal but handy if you can't cook for whatever reason.

I love cauliflower rice. I do really like cauliflower anyway, but it really has come into it's own, and been a fantastic substitute for me. We tend to have quite a few meals with couscous or rice and I just make my own portion while the others have what they'd normally have. Sometimes I pop it in the oven on a baking tray with a sprinkling of olive oil for a short while, if that suits the meal were having, but also just cook it like rice but with a little water, stirring from time to time. Also, as mentioned, it's nice to sometimes have finely chopped, sometimes rather larger. I also like it as mash, either plain or with cheese, sometimes as a topping instead of potato. Oh, and celeriac! Yum.
