My OH loved a curry, but since his T2 diagnosis I've put off making one. Well tonight I bit the bullet and went for it. I attempted Cauliflower rice for the first time and it was a success. So easy and a totally suitable alternative to rice. I also packed the curry with extra veg to make it go further (I got four portions out of it instead of 2! Definitely getting better at portion control).
The whole meal was 300 Cal's and 24g of carbs. It got a thumbs up from my OH too
