I love balsamic vinegar on my salads and a big dollop of creamy coleslaw.

It was. I love chicken and I've always liked salads, too. I also use balsamic vinegar by the way. My 'problem' was sugar, I could go without lunch and have an ice-cream, for example. Or 2!
 
I've grown to love salads, which are now a regular lunch - salad leaves (from a bag of Italian Style Salad, plus some Little Gem), cucumber, radish, cherry tomatoes, peppers (red, orange, yellow) and a dollop of Waitrose Creamy Coleslaw. I always like something hot to go with it (is that normal, or is it just me?), either chicken, fish or an omelette. Tonight for tea I'm having a crack at making my own Chicken Caesar Salad for the first time and have just got back from buying what I need from Sainsbury's. Wish me luck......

My downfall was sugar too and I openly admit I was a sugar addict and could very easily slide back to that if I am not careful. Not a huge ice cream fan but I could eat a multipack of snickers without pausing for breath!

I certainly enjoy a big plate of salad with an omelette or chilli or steak but enjoy it with cold meats or eggs or cheese too. I think to a certain extent it depends on the weather/season. If it is cold/winter, it is nice to have something warm with it, especially chilli. In the summer, I am happy either way.

Mine, too - and despite never having tried it before I managed to make a decent one. I shall add it to my list of menu options, especially as I got a 5.6 when I tested 2 hours later.
 
So, today I got my results from a full blood and urine test. Nothing out of the ordinary in urine and my blood results were good, too. My HbA1 has dropped to 60.7 mmol/mol from 75 in 3 weeks, so, I'm happy about that. Hopefully, my doctor will also be happy next week.
 
He/She should be! Well done @helen56; considering the HbA1c is measuring glycated cells over the last 3 months your reduction over 3 weeks bodes extremely well for the longer term.

And just like that 2 hours after lunch (grilled salmon and salad) I saw 8.9 😳

I did nothing wrong as far as I can tell and the only thing I can think of is that I was really stressed at the time + it's a very hot day. Could either of those have caused this sudden rise?

Did you switch hands and do a second test? That's what I do if I get an unexpected high or low. If the second test is the same or thereabouts I'll take it as correct and just take the average, but if it's very different I'll pick another finger and do a third to see which of the other two is the 'rogue' reading.

No, I didn't even think to do that, but I'll try it if it happens again. For now, I'm waiting to see my tomorrow morning reading.

What you ate may be perfectly fine as it may not have caused blood glucose to rise as such but it was higher because your blood glucose was high before you started eating.
You can't really say meals are ok or not unless you have pairs of readings, before you eat and after 2 hours.
If your starting level is high but your meal rise is ok you may still end up higher.

In that case, it must have been the stress as it was the only factor that hadn't been there before.
Either that or I don't know what :(

Yes, stress can definitely cause BG levels to rise and if it is uncomfortably hot and that stresses the body, as oppose to people who enjoy hot weather, then yes, so can temperature. Exercise will also factor in. Did you get up and do some activity yesterday when you got a good reading but were sat at your desk with a difficult and time pressured job today after lunch.

As mentioned, testing just before eating will give you a baseline. If that was already higher than usual due to stress or whatever, then you will be able to see that and the difference between the two readings will show you if the meal was OK if it was less than 3 mmols. So if you were 7.6 before the salmon salad due to stress and 2 hours later you are 8.9, then you can clearly see the meal was fine and not the issue, but the before meal level was elevated. If you can pin that down to stress, then try to find ways of managing the stress or avoid it. Gentle exercise like a walk can be helpful. Dehydration can also increase your baseline level, so ensure you are drinking plenty, especially if it is hot.... you certainly can't be in the UK at the moment!!
