Cauliflower rice: I oven bake it in a shallow tray. Spray with that spray oil stuff, sprinkle with choice of herbs/ spices (garlic salt with cumin work well), put it in an over at 220 for 12 mins, stir the brown bits in and spray with oil again, then back in the oven again for 6 mins. If you like cauliflower well done and soft, stir and put back in again. Goes brilliantly with mushroom curry. I sometimes flavour it with a little ginger and soy sauce and flake salmon into it once cooked.

Sounds good. Mushrooms are definitely one of my favourite foods as well. Packed with flavour. That’s a good shout. I was going to try it this weekend but work took over. Maybes next weekend. Love the salmon idea as well.

I just heat the grated cauliflower in a frying pan, like a stir fry

I've dry fried fresh cauli grated before now and the trick is, to constantly keep it moving so it doesn't burn though some will get a tiddly bit of colour. I liked it more on its own really than with eg chilli or curry on it. Thought it tasted slightly nutty.
