That looks delicious and I can almost smell its aroma - mouth watering time 🙂

Yum yum, and well deserved after your great result on the eye screening. Enjoy! x

Martin I’m so impressed with your bakes each week. Problem is I’m extremely sensitive to every artificial sweetener I’ve tried. Most of these recipes say to use sweetener of your choice, which ones do you use ?

I tend to use this in most bakes. If it doesn’t impact you then I recommend it as it gives a lovely depth of flavour.

Hi Emma, I use one called truvia for baking , it comes in white or golden. The only reason I chose this one was because it was the only one I could see in Sainsburys.

I agree, sugarfreelondoner is a great resource, as is chocolatecoveredkatie

I tend to google "low carb" and whatever the cake is I'm looking to bake and then read through the top few sites returned.
There's another tactic and that's looking at Nigella.com and figuring out how to low-carbify her recipes. Most just require switching normal flour for ground almonds and using a low carb sweetener rather than sugar.
