Hello all,
I have got a KitchenAid static blender, the basic model withe stainless steel bowl, the hook the wire beater and the spatula.

Now I'm searching some recipe to do that is suitable for people with diabetes and not too difficult to do.

Easy thing to do is to try to make bread with wholemeal durum wheat semolina and brewer's yeast but other ideas are welcome.
Something with cheese?
Something with chickpeas?

Mike I have a Kitchen Aid I love it...I got it as a house warming present...have a look at the recipe thread you'll find it in the food section...also see the Low Carb Baking thread...there are so many low carb recipes & ideas that'll keep you busy for weeks...I love my KA...use it all the time...and you can buy so many attachments for it...enjoy it...I have no doubt you will. ps there are several bread recipes that you can also mix by hand.

Mike you can also go to the Kitchen Aid web site...they have a recipe selection there... I have no idea if they have any low carb ones but you could easily adapt them...good luck.

I have found a pdf file on their side, trere's also in Italian and French, with the same recipes.
http://www.kitchenaid.eu/assets/pdf/English/Artisan_4-8L_StandMixer_EN.pdf

They are trying to use the maximum number of extra accessories for the recipes, of course.
The bigger problem is that I'm not an expert cook. For instance I know the "Torta pasqualina" and soufflés aren't very easy to do right.
Some recipes are low carb but other are full of sugar and starch, so one has to change the recipe and hope for the best.
Anyway I suppose that for a newbie having a top of the line aplliance is better than a basic model.

I’ve got a Kitchenaid, is it a blender or a stand mixer with large bowl?

It'll be a mixer Sally...the blender doesn't come with a stainless steel bowl & the dough hook or the whisk.

Mike you can use the mixer for so many things...great for making bread & pastry (low carb) the dough hook is great for kneading...it takes the 'pain' out of bread making...there are several different recipes...have a look on the low carb baking thread & the recipe section...you don' necessarily need any accessories now...but if you do decide to expand your home cooking skills...you can buy them if/as you need them...have fun.

Mine is the stand mixer - Model "Classic" with a stainless steel bowl, an hook, a spade and a wire beater.

Ah same as mine. I will have a look through my recipes & report back. I’ve made cloud bread in my machine as it it’s great for whisking egg whites and also sugar free meringues.

Contraption?...how could you say that:D...it's a thing of beauty...a work of art...and besides it does all the kneading for you...I love mine:D.

Oh I thought that was what the bread maker did 😛

I have a bread maker that does everything for you...rarely used...I prefer watching it being kneaded...feels like I've really been involved in actually making the bread...time consuming but so enjoyable.

I have tried a cloud bread recipe. Used Philadelphia cheese and followed this recipe: https://thebigapplemama.com/2016/01/no-carb-cloud-bread.html
Unfortunately the blobs collapsed together in the oven, and I got a brown omelette-like sheet instead and egg smell in the kitchen.
I suppose that when i mixed the cheese and yolk mixture with the egg whites the egg whites unmounted and lost the air...

Sorry yours wasn’t successful Mike. I notice this particular recipe uses sugar/sweetener. The recipe I follow uses just Philadelphia and eggs. When I’ve got at better access to PC I’ll see if I can find my recipe. It’s never failed so far. I’m also thinking of other recipes I use to follow in due course

I've found another recipe, with photos, and I noticed that is used a wooden spoon to mix the whites with the yolk an cheese mix. I have used a wire beater to mix. Also this recipe says to set the oven to 150 C instead of 170...

Usually when mixing beaten egg whites with other stuff the aim is to mix while losing as little air as possible from the whites. I would use a metal spoon, with a very gentle action, sometimes called folding. Certainly not a beater.
