Finally I retried and cod a decent result. I used a wooden spoon, and watched the oven. Stopped at 20 minutes@150 C and made 1 minute of grill. I used half the doses because I didn't want to throw away the A class extra fresh eggs I bought (six eggs 1,65€)

I've found another recipe, with photos, and I noticed that is used a wooden spoon to mix the whites with the yolk an cheese mix. I have used a wire beater to mix. Also this recipe says to set the oven to 150 C instead of 170...
@MikeTurin metal spoon is best....just to check you’re whisking egg whites and stirring them through the yolks and not whisking the whites and then whisking in yolks? That would definitely not work as you’ll overmix and take the air out. Recipe I make is Dukan diet chocolate cake, which whisks eggs and mixes through yolks with cocoa. Also whisked roulades on similar basis and also I make sugar free meringues too.anything that requires whisked egg whites works very well. Apple snow is another one. I don’t make many cakes in the kitchenaid anymore as I use coconut flour and it often doesn’t end mixing.
