If you scrape the seeds out of vanilla pod just remember that the pod itself still has the power to flavour things so shove it in a jar of sugar or whichever low carb sugar replacement you’re using and let the flavour develop. It adds another layer of flavour when baking.

I popped a whole vanilla pod in vodka with some sugar and it has made the most amazing vanilla essence!

Did you drink the vodka?!

Haha! well only ever a teaspoon at a time in baking... Commercial vanilla essence has virtually undetectable amounts of vanilla in it, so this is kinda supercharged 😛

Does it differ much to vanilla extract rather than vanilla essence?
I’d never buy essence.

Well it’s not as sugary I think, and certainly smells very vanilla-y, but to be honest I’m not sure I can taste much difference!

Those look AMAZING!!!! Can your recall what flavours they were?

I had to look them up Colin...hopefully have attached menu below. Very subtle but very nice. When we actually got to be served, there was no info re available flavours, very minimalist establishment, so we just asked for their recommendations. Shop was called ihalo.

They all look delicious. No idea what taro tastes like though so would have got a little taster of that one 🙂

one fave was to roll a sponge round real strawberries n nice icecream n make a nice artic roll treat.

I'd like to try the bean there done that one!

Colin - vanilla extract is a 'cleaner' taste than flavouring. A whole pod goes a very long way before you get to the stage where you finally need to bin it and re-invest, doesn't it!

The roll which I used to purchase was called Arctic cos it was cold and pretty solid, rather than articulated. But each to his own! 🙂

But realising that you both actually meant Arctic anyway - it just reminded me of making and enjoying Baked Alaska!

This is my guilty pleasure. Not very often. You could say it is my alternative to prozac!

That is delicious ice cream.

I believe they also do Haggis flavoured crisps which are yummy. I’d not try combining those with the ice cream though.

Ladies and gentlefolks I give you articulated ice cream. Almost!
And look at that slogan! They’d not get away with that now!2577AB78-7619-4F35-8E22-AFE43E86AA1E.jpeg

At home Kelly's Clotted Cream Ice Cream, out & about has to be Magnum, nowt else will suffice. Out means lots of walking so no insulin required.

We’ve always got Mackie’s in the freezer - it isn’t as sweet as all yer chunky munkys and phish phoods. Yum!

Mmmmmm

A proper vanilla ice cream (not whisky stuff) at the end of a long walk with a 99.
Then a walk back to the car. Still needs a bit of insulin but well worth it.

Do you remember the slabs of ice cream which were cut up and put between two wafers.
My grandfather was an expert at slicing it into 7 equal pieces!!

And then there’s those mini magnums in the freezer.
They have been our downfall during lockdown.

I used to LOVE ice cream: still love it now; but, find the fat can be problematic to digest now, though due to my liver problems. Don’t have it very often now! :(

Always needed to bolus for it, +2 after a meal, when at home but, very often don’t need to when out & about: definitely being active or moving about more when out helps to keep the BS from spiking up!🙄

For YEARS a plain mint, NOT chocolate mint & choc. chips are the WORST as they’re like hard pellets ESPECIALLY if in a soft scoop, which isn’t as easy to find was my favourite. THEN, I discovered gelato on my holidays to Italy & my favourites are the nuts flavours: hazelnut my absolute favourite; not easy to find that flavour in UK either; have to settle for chocolate hazelnut, or praline, which isn’t as aromatically nutty! Pistachio is quite nice too & once had parmesan which was quite unusual but, nice as well!😛

BUT, the most unusual flavour I’ve ever had, by mistake was a whipped purple colour I assumed was blackcurrant, of a Chinese root vegetable, I don’t know what it would be in English but, in phonetic Cantonese written in English is Woo Tau! Yuck! DID NOT like that: very earthy, cross between a parsnip & a swede; VERY odd in an ice cream flavour!o_O There are some pretty wacky fruit & vegetable flavours of ice cream in HK!😱 AND I never assume flavours by colour anymore, always asking what it is first!o_O
