I'm intrigued what is actually going on.
I had some noodles(60g) with some ham and veg for dinner. My 1 hour spike was 10.3, not good, but my 2 hour was 4.4, one of my best readings ever. I didn't test before the meal, but it is generally 5 to 6.
Does the rapid decline mean my insulin works well after a delay, or perhaps the amount of sugar conversion of the noodles was very rapid, but of little quantity.
Am I getting too involved in the science?😱
