I'm afraid that nothing on your menu other than the omelette would be on my menu - but I am really sensitive to carbs.
At the moment I am not eating as much as I used to - probably as a result of lockdown.
I did like the pancakes I made for Shrove Tuesday - an egg, blended with half a 'blob' of mozzarella cheese looked just like pancake batter. I added some psyllium flour - too much as it turned out, but the first pancakes were great, eaten with sprinkled Stevia and lemon juice. When I added water as the batter became gloopy they were not so good.
There are low carb bread recipes, and lower carb choices such as swede rather than potato, chopped cauliflower rather than rice with a curry, lasagne made with parboiled leek, split to make the 'pasta' layer, and although I have not tried it myself 'Gardener's pie' where the top is sliced courgette over grated carrot and rabbit is something I must try.
