I'm afraid that nothing on your menu other than the omelette would be on my menu - but I am really sensitive to carbs.
At the moment I am not eating as much as I used to - probably as a result of lockdown.
I did like the pancakes I made for Shrove Tuesday - an egg, blended with half a 'blob' of mozzarella cheese looked just like pancake batter. I added some psyllium flour - too much as it turned out, but the first pancakes were great, eaten with sprinkled Stevia and lemon juice. When I added water as the batter became gloopy they were not so good.
There are low carb bread recipes, and lower carb choices such as swede rather than potato, chopped cauliflower rather than rice with a curry, lasagne made with parboiled leek, split to make the 'pasta' layer, and although I have not tried it myself 'Gardener's pie' where the top is sliced courgette over grated carrot and rabbit is something I must try.

Self care can be so difficult when you are feeling mentally and physically exhausted - so be very proud of your self for the steps you are already taking, and the progress you have made.

There is always more that can be done, but it’s also important to recognise the good things you are doing, and use them as an encouragement and platform to build on.

Elevated and erratic BGs can be exhausting in themselves, and lead to ‘brain fog’, so hopefully as you settle with the changes you have made, and build on your successes you will feel energised and be able to think more clearly as your BGs move towards the normal range.

High BG can trigger hunger too (the glucose is staying stuck in the bloodstream and the cells can’t access it so ask for more energy), so gradually tweaking meals and snacks to more BG-friendly versions should gradually kill the hunger pangs too.

Keep going! I know it can feel really tough going, but it really is worthwhile. We are rooting for you!
 
Thanks Jenny. My periods are abit hit and miss, my last period was 6 weeks ago. Then they go back to every 4 weeks, could be heavy, could be light this is why I think I might be perimenapausal. Also dealing with my mental health aswell it's extremely difficult. Thanks again.
I've also found that even a little excercise helps mentally. I usually have to force myself out for a walk but when I'm back home I do feel much better. Finding a hobby also helped mentally plus I tend not to eat so much or think about food so much.
 
What is HDL and LDL?
Those are different parts of your blood fats. High density lipoprotein, and low density lipoprotein. Sometimes called ‘good’ and ‘bad’ cholesterol.
