Help needed ... I need to change my ways

I have done low carb before I struggled a bit but
My plan is to reduce the amount I normally have been half by having more salad or veggies in its place

In addition to food and medication, the other areas that are important in managing diabetes are exercise / activity and body weight. What activities do you do? Not necessarily sport / gym, but things like walking, cycling, gardening etc. If your body weight means your BMI is over 25, and particularly if over 30, then reducing it is also important.
From what you've said, a bug / infection is the most likely explanation for your increased blood glucose levels. The main thing you can do, as you're on metformin, is drink plenty of sugar free liquid.
 
Your comment about having lots of freezer and fridge space made me smile, I too now have a much bigger fridge and freezer. I have the problem that I do rather a stressful job with long hours and work at home and at the weekend, so I need some carbs to keep me going.
 
I do eat some carbs - salads and veges and small amounts of berries or other low sugar fruits, but I need to eat them in small amounts at intervals or I become lethargic, they do not give me energy.
