Thank you Leadinglights, I have been looking through a few pieces of info on carbs and I am happy to find that Almond Meal /Flour is something I can use to make a waffle using 28grams using a touch of baking powder to make it lift, together with a medium egg and maybe a splash of water. This will give me 160 Cals: 6grams Carb plus carbs in the egg for the waffle. So that may be a better substitute for Polenta but not quite so tasty 🙂. That may be useful as a breakfast with a bit of protein on top. I think I need an app to establish quickly what the nutrients are in each food item. Will go and search for one if there is one available here that would be great. 🙂
 
@mopinwil you may need to revisit your polenta recipe as polenta very definitely has carbs, 65g which looks about a tablespoon full is 10 g carb, so I suspect it was rather more than you thought.

You might find that cheese waffles are useful - if you don't have a waffle maker then they can be cooked in a frying pan like a pancake and used as wraps - they are egg, cheese and a small amount of a low carb 'flour' such as ground almonds. They are almost zero carb.
 
Oh that is a good idea. I do have a waffle maker but when I drew it out of my cupboard yesterday I found the little visual notes were washed away. I will have to go look on one for sale and see what each little visual means and draw them in. Just my luck eh why can anything be simple? I will l try that for breakfast tomorrow with a suitable topping of protein but not sure what yet. :🙂
 
I made some Keto rolls using almond flour well ground almonds actually, they were OK but a bit more like a scone/cake texture and a bit sweet so I thought if I make then again I would add some more savoury ingredients like sun dried tomatoes and olives.

I return to say that I have been religiously logging all I need to establish how I am coping with Type 2 and can honestly say it is an eye-opener. The first few weeks I was getting used to the whole thing, then I decide to experiment to see what makes me spike. Very interesting results and I am so thankful for all the advice I have been given.

I have managed to come down the scale gently as I went to an average reading of 7.3 and infrequently to 6.0 which is very encouraging and I am hoping that with the inclusion of exercise when I can get my breath back the situation may improve more.

I can confirm that mood and movement are getting better also now I have relief from the Neuralgia by using Ibuproven Retard, especially at night as it gave me sleep and I felt sleep-deprived before and was going downhill. Once I have finished my logging and testing and after my next appt with my GP I will be stopping the Ibuproven to see if Neuralgia has gone into remission. I can always recommence if it hasn't.
