I’ve recently tried a few recipes with gram ( chickpea ) flour. Mainly used in Asian cooking but more versatile. I made tortillas with gram flour and arrowroot flour, which binds the mixture .......... 2 six inch tortillas with a generous portion of homemade chilli gave a BG ‘spike’ of only 1.6 ( 6.6 to 8.2 ) Ok in my book. I also made some onion bhajis ........ delicious and reasonably BG friendly. I’ve found loads more recipes to try.
 
Onion Bhajis are the ONLY thing I've ever used gram/besen flour for! Easy peasy.

Chickpeas are a weird one - some people digest the carbs in chickpeas (and I assume, therefore, gram flour) whereas others find it "passes straight through".
I have used it for fritters but not tried baking with it.
 
Well I've never needed or wanted to try baking with it. (Been that long since I had a bhaji or even an Indian or Chinese in fact nearly 12 months since we've visited a chip shop cos we literally haven't been anywhere to do so)
 
I love pakoras (like onion bhajis with onions) especially potato ones, but sadly have to stop eating these, even to though they are made fresh at home.

I am not sure how chick peas will affect my BG, so in a few weeks I will trying out chick pea curry, pakoras with no potatoes, chapati made from gram flour.

Home made onion bhajis are great, really easy and quick.
You can make them as spicy as you want and add whatever spices you fancy.
Then, you don't even bake them - you fry them. I do not have a deep fat frier (or a "chip pan" as my Mum had) but find they work fine as flat patties.

There again, I love experimenting with food and get bored if I haven't tried something new at least once a month ... usually more often. So, I have not missed the chippy although, I guess, like most take aways, they would deliver if I was in need.
 
Yes - I digest the carbs from all legumes, all the peas and beans only too well - I think it might be something in my DNA as I have generations of people who must have been the poorest of the poor. The further I go back the worse it gets.

I don't like boiled onions really, but am very lucky my lovely wife is a fantastic cook and looks after me

We don't have a deep fat fryer, a wok with oil in it, and we do have prefer gas

Chickpeas stuff is very versitile and good for experimenting.
