I’ve recently tried a few recipes with gram ( chickpea ) flour. Mainly used in Asian cooking but more versatile. I made tortillas with gram flour and arrowroot flour, which binds the mixture .......... 2 six inch tortillas with a generous portion of homemade chilli gave a BG ‘spike’ of only 1.6 ( 6.6 to 8.2 ) Ok in my book. I also made some onion bhajis ........ delicious and reasonably BG friendly. I’ve found loads more recipes to try.
