So after a few recipes that didn't work out I finally had success with making Keto rolls that are yummy although the ingredients are a little strange, so I can have a burger in a bun tonight.

These were very simple and easy to make but clean up was abit of a mare with all the melted cheese bits in the mixer.

Tried to make the rolls, today. Not bad but they need work!!!!
The mozzarella I had was a ball which when melted with the cream cheese didn't really mix in and seemed too liquid so I think bought grated mozzarella may be better. Translation from the cups to grams maybe a bit iffy. I used some coconut flour as suggested but it seems to make them a bit too sweet. The texture seems more cake like.
I shall try again but maybe add some savoury ingredients like sun dried tomatoes and olives or chilli.
They definitely look rustic compared to yours.
 
I used grated cheese then once blended it all went into the mixer. I find that with any of these Keto breads the amounts are key it took me a while to master my bread loaf but its now spot on everytime these rolls are a new one for me.

I had to get my Oat fibre from another company last week but it was more processed and light and fluffy not powdery and dense like my normal organic one. I use weight not cups so the bread was rubbish and was in the bin b4 I even baked it so alot of disasters are due to differences in brands and cups v's grams it all abit hit and miss. So today I will try this new oat fibre again until I get it right but you can't beat the organic stuff so when it's back in stock I'm buying in bulk.

They look great, I’m thinking making some hot cross buns
will need to look around for a recipe any ideas anybody ?
