140g carbs in one meal is quite a lot, so if that is right, it is certainly capable of bumping your levels up that high and higher. With Type 1 where we have limited or no insulin production, we work on the basis that 10g carbs will raise your BG levels by about 3mmols. Obviously you have some insulin production so it will not rise that much but 140g carbs at one go is going to be a challenge for most diabetics at one meal.
You are better eating smaller amounts more regularly than going all day and then asking your body to try to manage that much all in one go. As mentioned your liver will be releasing glucose into your blood stream throughout the day if you are fasting. Eating actually shuts off that function, so fasting for long periods isn't always as helpful as you might expect, especially if you then eat a lot of carbs.
