Hi all,
Following some reading on here, I've been enjoying cauli rice (either the ready chopped from Mr S or a whole one put in the processor).
Its currently my favourite. After drying it in a hot pan, I'm making fake rice, potato or adding egg and tasty bits (garlic/spices) for a fake pastry or pizza base.
For me – its working well but I know I'll get bored soon.
I understand many have difficulties with underground veg – but has anyone has tried the beetroot rice? (local supermarket has some on offer) Thinking this may brighten the food and add a little flavour.
Guess I need to experiment but if others find this an absolute non-starter, perhaps the disappointment is best avoided.
What do the regulars recommend to some one who 'loves' grated/chopped cauliflower?

PS Currently eating cauli two or three times a week – its my 'treat' food. I can do those little sweet carrots. 2 (or three if small) seem to be OK as pre or post breakfast snack..
