Just thought i'd share with you that i've bought a new recipe book off of Amazon! Only ?9. Its Snog Healthy Treats Cookbook. The recipes use gluten free flour and agave nectar making it low gi 🙂 So hopefully I can make cake AND eat it too :D
 
Oooo, interesting.

I had a quick flick in Amazon using the look inside. Does it look like any of the ingredients will be difficult to obtain (which is a complaint I note is said about many other diabetic cookbooks).

I didn't look like lists cals/carbs either - but that should be fairly easy to calculate from the ingredients.
 
You will have to take care, it's not a diabetic recipe book, gluten free flour is still flour and a lot of the recipes involve fruit of some kind or another. Sainsbury's sell Agave nectar, I've found it a great alternative to golden syrup (obviously a no-no), and doesn't seem to affect me much.

I have been trying to work out where Spelt bread comes in the scheme of things? the flour is suposed to be course I understand.

I believe spelt is an alternative to ordinary flour for people with coeliac disease where gluten is a problem.

Its made from the Agave, a type of Mexican cactus, latin name Agave tequilana, which may give the clue that it is the source of tequila. Sweeter than honey. I think Sainsbury's sell it in a speciality section.

Don't think so Alan, spelt contains Gluten! It's an ancient sub-species of wheat (does back to neolithic times)

Oops! Thanks for the correction Vic 🙂 Thought I remembered seeing it in the gluten free section of Waitrose, obviously not!

It's possible they have a version with gluten removed (<4% entitles you to label it gluten free apparently), but I doubt it.
 
I was going to correct you myself about the spelt til I realised Vicsetter had done so! Thanks 🙂
And also I believe they're lowering what entitles something to be labeled gluten free, can't remember where I read it but yep.

But... I have news for you! This morning I made some of the brownies in the book. Very yummy, a strange texture but I guess thats the agave. I've had no spikes like normal and actually they used little flour only 100g and also combined the recipe with ground hazelnuts which I guess would add to it 🙂
