I have been reading about double cooking things like potato,rice,pasta alters some of the starch to resistant starch is this beneficial to type 2 and dose this put chips back on the menu
Maybe, but it might be a question of portion size and the type of potato. Just wanted to say that I finally tried celeriac! Not a fan, back to the drawing board 🙂Maybe, but it might be a question of portion size and the type of potato. The only way you'll know is to test before & after.
I tend to avoid potato is all its forms, though I'll have chips sometimes if we eat out and I have something like a steak or Hunter's Chicken, so if I want to make chips at home I use celeriac, which has 1/8th the carbs of your average white potato.

I have made these a few times and are an ok replacement to chips
Butternut Squash or some of the other squashes like Turk's Turban, Acorn squash. Butternut can be found now in most supermarkets but the others not so much, Asian shops sometimes have but I grow my own of different squashes.Oh I wish I liked cauliflower.
Or swede.
Or celery/celeriac
I love most veg but, sadly, these spud replacements have a flavour not to my taste. I have tried to hide it different ways such as paprika and Parmesan and other strong flavours but, sadly, I they have all failed to hide the underlying ones that my tastebuds dislike.
Every so often, I will try again with with something else as I hate to fail.So please keep suggesting alternatives.
I've made swede chips as well and I absolutely live them.I love cooking them with Olive oil and Smoked paprika...they are simply delicious. 🙂I love swede chips and they work well for me. I toss them in a bit of oil and paprika- yummy. I like celeriac but it is so hard to cut
