I have been reading about double cooking things like potato,rice,pasta alters some of the starch to resistant starch is this beneficial to type 2 and dose this put chips back on the menu
 
Try it and test. See what the result is.
Adjust portion sizes if it's not a good result.
Try again.

Maybe, but it might be a question of portion size and the type of potato. The only way you'll know is to test before & after.

I tend to avoid potato is all its forms, though I'll have chips sometimes if we eat out and I have something like a steak or Hunter's Chicken, so if I want to make chips at home I use celeriac, which has 1/8th the carbs of your average white potato.
 
I would treat the theory with caution until you have proved that is the case with you but even so chips probably should be kept for the odd occasion and even then only a small portion otherwise it could become a slippery slope to them becoming a regular thing.

Just wanted to say that I finally tried celeriac! Not a fan, back to the drawing board 🙂

Well done on trying it. I've not got around to it yet, it's the whole celery aspect of it is putting me off 😳
Butternut squash is ok, and makes a decent potato replacement served as a veg. I cook mine in the airfryer with a bit of oil and either herb or spice

I am completely with you there. The celery taste is definitely a “marmite”.
Unfortunately, most of the lower carb chip alternatives are not in season atThe moment. But, some people swear by swede chips … if you like the taste of swede. I tried masking the swedeness with Parmesan but there was not enough cheese for me.
 
I love swede chips and they work well for me. I toss them in a bit of oil and paprika- yummy. I like celeriac but it is so hard to cut

I love most veg but, sadly, these spud replacements have a flavour not to my taste. I have tried to hide it different ways such as paprika and Parmesan and other strong flavours but, sadly, I they have all failed to hide the underlying ones that my tastebuds dislike.
Every so often, I will try again with with something else as I hate to fail.So please keep suggesting alternatives.

Butternut Squash or some of the other squashes like Turk's Turban, Acorn squash. Butternut can be found now in most supermarkets but the others not so much, Asian shops sometimes have but I grow my own of different squashes.

I've made swede chips as well and I absolutely live them.I love cooking them with Olive oil and Smoked paprika...they are simply delicious. 🙂
