Decided to make a cauliflower cheese, first time ever, I hate veg but my poor long suffering husband fancied one. Found a diabetes friendly recipe but didn’t have all the ingredients. Used smoked cheese instead of strong cheddar, Gorgonzola etc, coconut flour (star for me), cinnamon instead of turmeric and followed the instructions. Too runny so added some coconut flour, added to cauliflower which I had put in the microwave for too long and then put too much sauce on it. Having said that my husband loved it, I think he’s just grateful for something different and it was edible, he’s not fussy. I did have some and it was fine but probably had two florets. Anyhow felt chuffed to bits that I had eaten some cauliflower without gagging so teeny step forwards. Diabetes is rather difficult when you loathe so many foods!!
