Decided to make a cauliflower cheese, first time ever, I hate veg but my poor long suffering husband fancied one. Found a diabetes friendly recipe but didn’t have all the ingredients. Used smoked cheese instead of strong cheddar, Gorgonzola etc, coconut flour (star for me), cinnamon instead of turmeric and followed the instructions. Too runny so added some coconut flour, added to cauliflower which I had put in the microwave for too long and then put too much sauce on it. Having said that my husband loved it, I think he’s just grateful for something different and it was edible, he’s not fussy. I did have some and it was fine but probably had two florets. Anyhow felt chuffed to bits that I had eaten some cauliflower without gagging so teeny step forwards. Diabetes is rather difficult when you loathe so many foods!!
 
That’s great that you’re trying new things. Cauliflower is a good low carb option and there are lots of ways to make it cheesy. It’s also good as a pizza base. I hope you have fun experimenting with it and find recipes you love.

Thanks Trophywench but I definitely can’t cope with broccoli, will try the cauliflower cheese again though. Sounds daft I know but I really have a problem with veg 😱😱

As you say... small steps forward but you DID it - and all fresh and from scratch too. Well done!
 
I like plain food and can't cook for toffee so my idea of cauliflower cheese is a cauliflower with a block of cheese melted over it ... nom nom nom

Two florets is better than no florets. 🙂
 
Well exactly and luckily I like any number of sauces so if it's something I'm not awfully keen on just serve plenty of sauce with it. Many decades ago in France husband and I stopped for a meal in the middle of nowhere and one of the choices was colin aux mayonnaise. We didn't know colin but thought he'd probably taste OK coated in mayo so ordered it. Turns out colin is hake in French - and he was delish!
 
My wife uses cream cheese as the 'sauce' for her Cauliflower cheese.
So it is extremely simple : Cauli, Cream Cheese, seasoning, Mature Cheddar grated on top for final browning under grill.

That sounds easier and probably better than mine - I’m a rubbish cook - can’t sew either, though strangely am good at tapestry!!,

:D I'm not much of a cook either and I did this! I've branched out in roasting thick slices of cauli, with other Mediterranean veg, drizzled with olive oil and sprinkled with smoked paprika (or whatever you fancy) and that was nice too 🙂

I'm gonna try the cream cheese one, sounds yummy. 🙂

Same here.....except some garlic too.....yep, dragonbreath after.
