Welcome to the forum
At least you have got the idea that you need to reduce carbs but all those foods you mention together with rice, pasta and more obvious cakes, biscuits, sugary drinks including fruit juice which you should cut out.
Most people who are managing their diabetes with a low carb approach would only have very small portions of those foods if at all and base meals on meat, fish, eggs, cheese, dairy, vegetables and fruits like berries.
The suggested amount of carbs per day is no more than 130g as being a good starting point for reducing carbs to.
Keeping a food diary with everything you eat and drink with an estimate of the carbs not just sugar and see how close you are to the 130g and you will see where some saving can be made.
Some kitchen scales to weigh your portions as some people underestimate just how much they are putting in their bowl of cereals and just how much a potato weighs.
The book or app Carbs and Cals is really useful as it give a illustration of various portions of a whole range of foods with their carb value and their are some surprises. Portion control is important and sometimes you think 'is it worth the carbs for that potato the size of an egg' and would rather have something else instead. People find lower carb substitutes which are actually nicer.
Have a look at this link for some ideas and some do's and don'ts .https://lowcarbfreshwell.com/

130g per day includes everything even drinks, there are carbs in many foods which people are not aware of.
There are people here who are veggie and there are lots of low carb veggie recipes if you look on the internet.
Wholemeal pasta is no less carbs than white pasta but I use edamame bean or black bean pasta which is low carb.
I use butternut squash, celeriac, swede rather than potatoes. Many breads are high carb for a standard slice but there are some lower carb ones, somebody mentioned one from M&S which is 13g carb per slice.
Many find a breakfast of full fat Greek yoghurt with berries and a small portion 15-20g of a low sugar cereal (granola or All Bran) is a good low carb breakfast or eggs in any form with tomatoes, mushrooms and maybe 1 slice toast.
I think if you have food preferences which don't include zero carb meat and fish then getting a home testing blood glucose monitor is important as it enables you to see just what foods you can tolerate and what you can't. Testing before you eat and after 2 hours will give you an indication if your meal was tolerated if the increase is no more than 2-3mmol/l
Inexpensive monitors can be bought on line, the GlucoNavii or TEE2 are ones with the cheaper test strips but worth shopping around as prices change.

There are some vegetarian main meal recipes here @Adele21 and they have the nutritional info:

The amount of carbs Type 2s can tolerate varies a lot. Be guided by your blood sugar.
