Born again cauliflower

I can take or leave bog standard cauliflower, whether buttered and mashed ( a la mum, bless her soul ) or with tasty cheese sauce. However, cauliflower has recently become back into favour and even a bit ‘chefy’. I thought I would give cauliflower steak a go and was really impressed with the result. Cut the cauliflower from top to base into approx. 3 to 4 cm. thick steaks. Drizzle the steak(s) with olive or sesame ( my preference ) oil. Sprinkle with crushed walnuts, chilli flakes and some dried mixed herbs. Finally drizzle with some lemon juice. Roast in a hottish oven dish for about 30 minutes. Lovely on it’s own, or great as an accompaniment to meat or fish.
 
Ooh, I feel a bit of creative cooking coming on. Sounds delish!
 
Try the same or similar with slices of cabbage.
I do black pepper and oil but it should work with various different additions.

I have found roasting cauli is the secret. It gives it a nutty flavour which makes it acceptable in cauli cheese or curries.
Boiled cauli is about as pleasant as sprouts, swede and celeriac.
 
Cauliflower is great in curries, I cook a lot of BIR style curries and cauliflower buhna is to die for

I know what you mean but I can honestly say that roasting cauli removes the bitterness. It is much sweeter than the boiled yukkiness.

That’s interesting to learn. I found cauliflower rice & mash really butter (I’m a super taster) but do like cauliflower cheese. So maybe I’ll give this a try. Thanks!

I too had cauli cheese for tea, but will try this very soon!
 
I have developed lots of cauli recipes as it’s now taken the place of potatoes and rice, having roasted cauli tonight in fact!
 
I had this tonight with a nice wee piece of sirloin steak, but replaced the cauliflower with defrosted blanched celeriac thick chips which I froze a few weeks ago. Same recipe as in original but added some fennel and caraway seeds. It was lovely and great on BS. - 6.2 before meal and 6.6 after two hours.

for videos on a specific product e.g. cauliflower won`t cost you a penny.
 
There's a gorgeous cauliflower cheese / tuna bake mash up recipe I stumbled upon the last week. You steam some broccoli and use that as the basis for the sauce which is then thickened with cream and cheese. After layering the cauliflower in whatever dish you're using you then dot tuna through the dish before pouring the broccoli, creamy, cheesy deliciousness all over the lot. Top with a little extra cheese and bake.
It's delicious.

Lots of various recipes for celeriac chips on the old interweb!

Some are spicy and others less so but they're all much of a muchness it seems. Curious to know how you get on and how any of them work out as I've not tried them yet.
