Went for my eye test today and was talking to another lady while we were waiting for our eye drops to work.
She said her diabetic nurse had told her that eating fresh beetroot increases insulin production and she encourages her patients to either eat beetroot or drink the juice every day.
I checked with "Dr Google" and the results are a bit inconclusive.
Has anyone else come across this?
 
IMHO, seeing as beetroot is a starchy vegetable I'd avoid earting/drinking it irrespective of unproven claims.... Besides, the very thought of beetroot makes me want to (now where is that appropriate emoji?)
 
Beetroot increases insulin production in muggles because it contains pure sucrose, like its cousin sugar beet. The amount is variable by variety. Unlike Martin, I quite like it, though I rarely eat it cos I can never figure out how much insulin to bolus for it.
 
I love beetroot although unfortunately it won't increase my insulin production because my pancreatic beta cells have ceased to be. Quite a few fairly well proven claims in the sports world that the nitrates it contains covert to nitric oxide and act as a vasodilator increasing blood and oxygen flow to the muscles enhancing performance this process can also help lower blood pressure. Beetroot juice (Beet It etc) is quite a fast acting and high value carb and often contains some apple juice as well.
 
I'd read somewhere that beetroot was good for you. Can't stand it when it is in vinegar but love it raw grated on salad, roasted with other root vegetables or cooked in salads or in sandwiches with cheese.
 
I love beetroot but like Mike never know what insulin requirement I need for it and find the food labels not very accurate for me on the packaged/jarred variety so rarely eat it. Also love rhubarb without sugar - my Dad grew it in garden many years ago and we used to pull it out of the ground, top and tail it and eat it there and then - much to the horror of my mother!
 
Here's the CoFID data on beetroot. I can't comment about how it affects T1D, but I eat it in moderation - boiled, pickled and as baked beetroot chips. We grow sufficient to keep us going in it.

@DaveW - is that for 100g weight?

The pickled figure is a bit odd, considering you boil it before you lob the vinegar in!

I love it just boiled but never tried it raw. I'd have to invest in Marigolds before preparing it myself so I buy vacuum packs of steamed baby beets from Tesco !

Try it with bacon, fab.

Never eaten it raw, but my Dad used to grow it too, along with gooseberries, another fruit that can be difficult to eat without added sugar.

I first found it raw in a Tesco ready prepared salad, and occasionally our Tesco has packs of shredded raw beetroot. When I was newly married I bought beetroot in the market, took it home, peeled it and cooked it, it looked nothing like the beetroot my Mum used to serve up. I then found out it should not have been peeled before I cooked it, the colour had bled out 😳
 
We get it in our veg box. I’ve always liked it hot, cold or pickled. Yum. Never seems to overly affect my BG (I generally treat it like other root veggies and just leave a ‘bit’ of dose to mop it up)

Grated in salads seems to be popular. I’ve also seen it used in chocolate cakes!

LOL ! You'd obviously never seen mum preparing it. Does pong a bit though as you can't even clean em very enthusiastically before cooking, can you?
 
I just had some with lunch. Not grated, had my carrot grated. I have never noticed an issue with my levels, mainly have it with salad though its a low meal anyway.Love the idea of it with bacon!

Yes per 100g. I wonder if there is a reaction between the acid in the vinegar and the carbs/sugars in the beetroot.
