Help with carbs

Hi I currently work in a school and have had 2 girls with type 2 diabetes. Could anyone help regarding the weighing of the food as its all new to me and still trying to work it all out . My question is do I have to weigh out cooked veggies ie carrots peas? Also regarding meat does that have to weighed too. I know it's a protein and veg but in a book I have a chicken curry in there so is that for the sauce? And so Is vegetables I didn't realise veg had carbs? I hope this makes sense and someone can help me try and get this all correct thank you
 
Meat would be carb free, for most type twos it is not a problem - eggs and fish would be the same.
Carrots and peas have carbs, so do most veges, and sauces thickened with starches would need to be included in the count.
Grain of any sort, rice, wheat, oats are all high carb, as is potato and most things which grow underground.
I suggest making lists of foods which are low in carb content, under 11 percent is my limit, then those a bit higher, and then the highest, as that might help if there are choices available. If you know the number of carbs the girls are supposed to eat they might have very little to eat if they chose high carb foods, but a far more substantial meal if the choices are low carb.

I wonder if a book (or app) like ‘carbs and cals’ might help. Thousands of pics of different sized portions that can help you judge things by eye rather than having to weigh everything.
