The brain fog is exactly what I experienced when i was wrongly diagnosed Type 2 and had high blood sugars for 9 months. The difference on insulin was profound. I can remember feeling the fog lift. My husband noticed a marked change and said it was like having his wife back. I can see no benefit in feeling like this, i would get an appointment asap with hospital DSN and get sorted on insulin.
I remember having so much energy again! My hubby said something very similar to yours, he couldn't believe the positive change within a few weeks of starting insulin, being misdiagnosed as type 2 very nearly caused my marriage to breakdown. It certainly caused me numerous mental health issues.
I hope adult onset type 1 is getting to be more recognised now, I certainly wouldn't wish anyone to go through what I went through for even a short amount of time.
