Thought i would share some "stuff". On thursday i had a total melt down at work, snottering and bubbling about disbetes, not getting to grips eith everything, high BG, metformin miseries, long term condition blah blah blah.i proceeded to have a busy day, red nose and all. So awarded myself with 3 quality street. Glad i did that as it was a total reality check. This morning, i realised that all the info on posts re csrbs in food etc was all muddling around my brain, and i couldn.t really understand what i was doing,although info and support was great.
SO... i went back to basics, thought about, read about carbs and how to change carbohydrates to carbs and how much to aim for, snd yippee. I have worked out my good intake for the day, and Bg 11.5 before lunch which is a great low for me. So-now moving onward snd hopefully downward. Hope this helps others who might be struggling.thamks everyone. Carol
 
That's really good to hear Carolg 🙂 It can be very confusing and overwhelming, particularly in the beginning, but hopefully now it is starting to all fit into place a bit better you will make good progress 🙂 Remember, we are here to help with any questions you may have, and no question is considered 'silly'! 🙂

Thanks northerner. This light bulb moment has made me feel do much better.my arithmetic is certainly being tested and i am kerping a record of what i have, carbs and blood levels. Its here to stay, so get on with it catol.
 
Glad you're getting a handle on it. I've certainly improved my mental arithmetic since I was diagnosed!
 
Oh Carole! It's very daunting when you are told you have a condition that is for life and you just don't know how to take control. Don't worry about feeling that way. You are not the first and definitely not the last.

Cutting carbs is quite easy if you remember that high carb things tend to be white! Lol

When planning a meal you need to make trade offs. Do you want potato or gravy? Both have carbs so which is more important to the end resulting meal? Gravy is likely to have less carbs than a serving of spuds so there is your first trade off. Just add a few more sprouts (I love sprouts) and you are good to go.

150ml of bisto gravy made up as per instructions is 6gms of carbs. 150ml is a lot of gravy!

If you have any questions about the carb content just google it and 'My Fitness Pal' will surely have the answer.

One of my favourite trade offs is cauliflower rice. Just put the cauli through the whizzy wazzy woo woo (food processor) and fry in a bit of oil. Allow it to brown before giving it a mix and the stuff on top will cook in the steam that comes off the bottom stuff. Even better is to put a knob of butter in for a very luxurious taste.
 
While I remember.

If it has 4 legs it is fine.
If it clucks it is fine
If it can swim it is fine
If it came out of a chickens backside it is fine
Veggies that grow above ground are generally lower in carbs than ones that grow underground.

Thanks for this lynne. I spent 30 mis working out carbs in ingredients gor a pot of quorn bolognaise sauce-its smels no bad now but yuk when cooking. Tried cauli mash but it was like cauli peuk. I'll trade of the quorn for turkey mince next time which i wont have to count except the veg and i usually use. Have u tried sprouts baked with shalots, gatlic soy sauce,water n olive oil. Absolute comfort food n go with lots of things.carol

.wow, sounds like a mantra. If it swims out of the chip shop can it be ignored lol

Aye well, at least its putting the learning i got decades ago to good use. 2x2 is 22,3 plus 5 is ???
 
The cauli is raw when you 'rice' it and you fry it in a frying pan. Make sure not to over cook it or you just end up with more 'puke' - lol

Of course you can have fish from the chip shop - just not the batter! A bit like taking a shower with a raincoat on!🙄
 
I did cauli mash on a cottage pie. Smothering it in cheese helped.🙂 Bought some bulgar wheat yesterday. Lower carbs that rice or cous cous and cooked in Moroccan spices was lovely.

That sounds nice.did u put anything in the cauli mash. I made it plain with cheese on top of turkey mince. Not nice but think it was my .input that failed. Your recipes all sound great matk

Ditch the turkey for beef mince. Add some onion. Use some of your carbs to thicken the juice (arrowroot is lower in carbs than cornflour) cook peas and carrots and while everything's still hot assemble in dish finishing off with the cooked cauli rice. Top with cheese and grill for a few minutes till the cheese has melted.

Done this way you will cook the cauli for less time and it wont go mushy.
 
Added some butter. There is a lot of water in cauli, so once i mashed it, put it back on the burner to dry it out a bit. Was less mushy.
 
Also you need FRESH cauli - otherwise it tastes extremely cauliflower - y ! A bit strong even when you rather like it anyway.

Dont eat red meat. No wonder my cottage pie ead yuk. It eas bare naked with a smayter of cheese cause i hate graying cheese. Will try sgsin. Thanks everyone
