Cut the ends off and slice it. It is the same family as marrow and a bit tasteless on it's own. Will be fine in the meal you are doing.
I grew a few courgettes last year, I prefer them sliced with some butter........

Thanks ever so much Copepod I will do both those things.(peel/dry fry)We also grow lots, so for weeks each summer we rarely have a meal without courgettes! Best way to cook we've found is to grill or dry fry (no fat) in a frying pan, so they go a bit charred. Any fat during coooking makes them go soggy.
And if green = danger, then you can get yellow skinned courgettes or remove peel before cooking.
