Hiya, I'm second guessing myself a lot today, for over a week I have been eating roughly 20grms carbs and about 800 calories.
Looking at others posts am I being too strict, will it harm my blood sugars I've just had 2 slice of seeded bread wow 24 carbs maybe need to change my mindset a wee bit.
 
Perhaps if bread is calling to you, making some low carb bread would be a good idea.
There are quite a few variants you can try out which - even if you were to eat quite a bit of it, it would be within limits for most people. You do need to find a quick acting yeast though.
 
Unfortunately, I have bought all the ingredients, I'm hopeless lol.
I don't usually eat bread, I have struggled with breakfast took the eady option lol.

Today I had my easy option when I have no patience/time/inclination to make something

I buy whole (but small) salami and/or saucisson from tesco and slice a few slices and today I had it with a couple of spoons full of cottage cheese and two (I ate one before it got to the bowl) cherry tomatoes and a big mug of decaff coffee.

It is quick and it feels naughty and it keeps me going until lunchtime and has no problems with my blood sugars.

Some other days I have a chunk of mature cheddar and some home made seed crispbread.

Seeded crispbread is the absolute easiest thing to make and you can make it ahead of time and keep it in a tin like the bought stuff. Make it when you have the energy and then it is there when you need it on days when you don't.

Heavenly Fan on Youtube has a pretty good version. You can swap in and out various seeds if you don't have one of them just add that weight of one of the others. I am about to go and make a batch now.
They stick together really well and make delicious crispbreads perfect for breakfast with cottage cheese or a boiled egg or scrambled eggs or anything really.

I think 800 calories is a bit overly strict as a long term plan. You run the risk of putting your body into famine mode which can make things worse because if you are metabolically stressed and emotionally stressed because you are denying yourself then that will trigger blood sugar rises instead of stabilising your sugar levels. Which is bad in itself and will cause tiredness and cravings for carbs.

So I would suggest maybe you might find you would do better in the long term by keeping your carbs down to 20g but ignoring calories and eating stuff like seeded crackers and plenty of fibre and other things (Heavenly Fan has some amazing yummy recipes that are great for keto) that keep you full and happy so you can live happily with diabetes forever rather than pushing yourself to eat in a way that is unsustainable and sets you up to fail.

Ty for responding, the 800 is just to give me an initial boost, I'm not hungry to be honest, I will look into the seeded crackers I like idea of that

Ty for replying, the 800 is just for a kickstart, I don't think anyone could survive on that long-term. I'm just at the beginning and a lot to learn

If the worst comes to the worst and you don't get round to making crispbread - Ryvita do a sesame seed variety which come in at 6g carb apiece - so lob whatever on top of one of them. (We both happen to like them so NP, and could more than probably both do with substituting them for bread anyway - since neither of us is as sylph-like as we were!)

I'm watching her now, the flatbreads also look great at 1 carb a piece sounds good to me, ingredients initially will be expensive but will last a long time

The cherry tomatoes are higher in carbs, in particular sugar, than the ordinary salad tomatoes. There has been a call for them to be labelled under a separate carb content as they are out of the allowed variation, so it might be advisable to avoid them.

You might very well get some advantage, if you've been eating a lot of them. These small changes can add up over the weeks.
 
The problem with zero[ish] carb diets is the lack of a zero carb sandwich medium. We lasted a year+ by using full fat cheese slices (edam etc) as the outer layer with chicken slices, smoked salmon, other zero carb items inside. It was tough and a bit boring but it is possible, we also cooked meals, meat, fish but very careful with veg. My night-time snack was 2 macadamia nuts. Was as if I didn't have diabetes for that year or so, BG was 4-5 constantly with maybe 1-2 units of bolus, no basal. Not recommending it, but it is possible. Asked my DM team if diet ketosis was ok if DKA was harmful, never got an answer.
