Thank you all for a warm welcome to a newby. I've made a fruit cake using xylitol instead of sugar. Does anyone know if this will reduce the carb content and if so by how much. Thank you.

It will reduce it, but not by much I’m afraid because a lot of sugar is in the fruit. Plus as you know, the flour is just as much of an issue in terms of raising blood sugar. If you post the recipe and how many pieces it makes, we can show you how to work it out if you like.

You need to add up the carbs in each of the ingredients - the fruit and the wheat flour will be the main ones.
Taking out the sugar will result in a smaller cake, so you might like to experiment with adding a low carb substance to bulk it out - almond flour, coconut flour, even psyllium husk flour, though that can turn things purple. I used Lidl super seed mix when baking - I make bread and cake like things, but for me dried fruit is just too high in carbs. I have used the zest of oranges and grapefruits for flavouring with good effect.
 
Hopefully you do not have a dog, or any visitors with dogs - even in small quantities xylitol can be extremely toxic to dogs, causing liver failure and even death.

Key ingredients are- 10oz currants 6oz sultanas and raisins 4oz glace cherries 4oz dried apricots 2oz mixed peel 8oz plain flour 2oz almonds 1tbs black treacle rind of lemon and orange. 24 servings. Wow it looks bad as I write. Please can your offer better cake recipes

10 oz currants = 284g
Carbs in currants: 67.8g per 100g
Carbs from currants in cake: 284/100 x 67.8 = 193g

6 oz sultanas = 170 g
Carbs in sultanas: 69.7g per 100g
Carbs from sultanas in cake: 170/100 x 69.7 = 119g

In a similar fashion, using the carb values in my carb book, but you could just as easily google these, I worked out that the total carb value of your cake according to the above recipe is 780g so just over 30g per slice, without the sugar. I don’t know how much sugar was in the original recipe but sugar is almost 100% carbs(!) so for every 4oz of sugar you’d be adding about 100/24 g carbs to a slice of the cake, ie not a lot in the scheme of things. The majority of the carbs per slice are from the dried fruit.

If you check out the recipe section you’ll find lots of ideas for cakes, some lower carb than others.

If you’re not bothered about calories, coconut macaroons sweetened with sucralose have relatively low carbohydrate. There are lots of recipes which substitute almond flour for wheat flour. Again, these are not low calorie but shouldn’t raise blood sugar too much.

@ken try this one. You could reduce the dried fruit and add a little more spice but it’s 10gm carb per slice according to the recipe.https://sukrin.com/en/recipes/christmas-bread/
 
@Radders I reckon as the raisins are only carbs food probably a tenth of the loaf: like a slice of malt loaf. (I like idea of rum-soaked raisins too; I soak my goji berries in amaretto for another cake I make 😱
 
I'd have to soak mine in brandy LOL

I should think a 100g slice would be more like the size of a brick really!
