Will this lower my HbA1c

At risk of diabetes
If I eat porridge, kiwi fruit and berries for my breakfast. BG goes up to 11.7. However if I eat the porridge, wait 1 hour, eat the kiwi. Wait another hour then eat the berries. My BG stays between 7 and 9. Will doing this reduce my HbA1c or does the fact I have eaten them anyway make no difference.
 
You need to know your BG two hours after eating. If your BG is less than 8 after eating then your body has coped with the carb load to stay within range for Hba1c to come down.

If you space the carbs out this will present your body with a very different load to deal with than eating them all at once...
 
My instinct is that this will reduce your HbA1c, but I could be wrong.

Your HbA1c is actually measuring the degree of glycation of haemoglobin in your blood - ie how much glucose has become attached to the haemoglobin cells. If you are successfully keeping yourself "In Range" ie between 4-10 mmol/L, you are also reducing the opportunity for Haemoglobin to capture glucose and (in my layman's interpretation) increasing the opportunity for insulin to allow glucose to pass out of your blood and into the cells and organs where it is needed.
